Peanut Butter Cookies Without Brown Sugar

These peanut butter cookies without brown sugar require just 3 main ingredients and no flour or mixer. They bake up soft in the center with slightly crisp edges and plenty of peanut butter flavor.

Ingredients

  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 1 large egg
  • 1 tsp vanilla extract optional
  • 1/2 tsp salt optional

Instructions

  • Preheat oven to 350°F. Line two baking sheets with parchment paper.
  • Combine sugar, peanut butter, egg, vanilla and salt, if using, in a medium bowl. Stir until smooth and completely combined. Refrigerate the dough for 30 minutes.

  • Roll the chilled dough into 1-inch balls and place on the prepared baking sheets. Use a fork to gently flatten each ball in a criss-cross pattern, lightly greasing the fork if the dough sticks.
  • Bake for 10 minutes, or until the cookies are set and the edges are just beginning to brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

  • Measure the peanut butter for the most consistent results. With only three main ingredients, the proportions matter.
  • For the most predictable texture, use conventional no-stir peanut butter rather than natural peanut butter.
  • Don't skip the 30-minute chill. It makes the dough easier to handle and helps the cookies hold their shape.
  • Use a medium cookie scoop for evenly sized cookies.
  • Don't overbake. Remove the cookies when they're set and the edges are just beginning to brown. They'll continue to firm up as they cool.
  • Stir in semi-sweet chocolate chips or peanut butter chips for an easy variation.
