Vegetable Rice Salad Recipe

This Vegetable Rice Salad is packed with delicious flavors and textures. As colorful as it is delicious, it’s perfect for small or large gatherings as a light lunch option, a party food or a simple side to a family dinner.

Ingredients

  • 2 cups cooked rice any variety
  • 1 orange bell pepper seeded and chopped
  • 1 cucumber peeled and chopped
  • 10.5 oz cherry tomatoes halved
  • 1 red onion chopped
  • 10 oz shelled edamame prepared according to package directions
  • 2 limes juiced
  • 3 tbsp olive oil
  • 3 tbsp white wine vinegar
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Prepare rice according to package directions. Transfer to a large bowl and let cool.
  • Add bell peppers, cucumbers, tomatoes, onion, edamame, lime juice, olive oil, white wine vinegar, salt and pepper. Mix well and refrigerate until ready to serve!

Notes

  • Make sure your rice is cooled completely before mixing in the other ingredients. I like to spread the cooked rice out on a sheet pan or baking dish and place in the refrigerator to cool it quickly. (This also gives less warm time for bacteria to form.)
  • Add chopped fresh herbs to the salad such as parsley or basil for added flavor.
  • Add chopped chives or green onion into the mix.
  • Use red, orange, green or yellow bell pepper, or a combination!
  • Salt and pepper season the dish perfectly, but add your favorite seasonings such as paprika or smoked paprika, cayenne pepper.
  • Use white rice or brown rice for this recipe. 
  • Sprinkle toasted pine nuts over the top for an extra crunch!
  • Crumbled feta cheese is the perfect addition to this salad. Add it as you serve instead of mixing it in.
  • Replace the veggies called for in the recipe with any other vegetables you have on hand! Zucchini, mushrooms, carrots and broccoli florets would all taste great.
  • You can also make this recipe with couscous or other small grain.
