Festive Mint Chocolate Brownies

WHY MAKE THIS RECIPE?

Mint Chocolate Brownies: Delicious mint frosting sandwiched between perfect, chocolatey brownies and creamy chocolate. Take your next pan of brownies to the next level by combining fudgy and minty!

INGREDIENTS

1 cup salted butter softened 1 1/2 cups granulated sugar 2 eggs 1 tsp vanilla extract 1 cup semi-sweet chocolate chips melte 1 1/2 cups all-purpose flour 1/4 cup cocoa powder 1 tsp baking soda 1 tsp salt

INGREDIENTS Mint Frosting

3/4 cup salted butter, softened 3 1/2 cups confectioner's sugar 2 tbsp milk 1 1/2 tsp peppermint extract Green food coloring if desired

INGREDIENTS Chocolate Topping

1/2 cup salted butter 2 cups semi-sweet chocolate chips

Preheat the oven to 350 degrees F and coat a 9×13 baking dish with cooking spray.

STEP 1

Using a mixer fitted with the paddle attachment, combine the butter, sugar, eggs and vanilla extract and beat on medium speed until creamy.

Add the melted chocolate and  mix until just combined.

In a separate bowl, combine the flour, cocoa powder, baking soda and salt. Mix well. Gradually add to the butter-sugar mixture and beat on medium speed until just combined.

STEP 4

Pour the batter into the prepared baking dish and spread evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool.

STEP 5

Make The Frosting: In a large bowl, mix the butter until fluffy. Add the powdered sugar until just combined. Add the remaining ingredients and spread in an even layer over the cooled brownies.

STEP 6

Make The Chocolate Topping Combine the ingredients in a microwave-safe bowl in 30-second intervals in the microwave until creamy. Pour the chocolate over the top of the mint frosting and spread in an even layer.

STEP 7

Cover brownie leftovers tightly and store at room temperature for 3-4 days, or refrigerated for 6-7 days. If you want to freeze the brownies, place in a sealed container and freeze for up to 6 months.
