In a crockpot, combine corned beef, cream cheese, sauerkraut, sour cream and Swiss cheese.
Cook on Low heat for 3 hours, stirring occasionally. Serve warm with pita bread or crackers.
Notes
Thinly sliced corned beef works great! You can replace it with another sliced deli meat like ham or roast beef, if desired.
Don’t skip on the tangy sauerkraut or Swiss cheese. These are essential, integral components.
I love sauerkraut, but you can reduce the amount called for in the recipe by half if sauerkraut isn’t necessarily your thing. See the section below on how to use up the extra sauerkraut in your fridge.
This is best cooked on the low setting for a long period to really give a chance for the flavors to combine and develop.
After it's done cooking, keep the dip on the warm setting for parties.
