Crockpot Reuben Dip Ingredients
The ingredients for a Reuben sandwich are very specific, so are these dip ingredients. Try to stay as close as possible to the original ingredients. I’ve listed some recipe tips and subs below.
Corned beef – Any variety works. Buddig deli sliced corned beef is great!
Cream cheese – Use full fat for tastiest results. Cut into chunks to promote easier melting.
Sauerkraut – Essential ingredient! Use canned, bagged or make your own homemade sauerkraut.
Sour cream – Use full fat for best results.
Swiss cheese – Shredded Swiss is the star of the show (alongside the sauerkraut), so do whatever you need to do to NOT replace this with another variety of cheese.
How to Make Reuben Dip in a Crockpot
This dip is soooo easy to make. Waiting for it to be ready is the hardest part.
Step 1
Combine all the ingredients into your crockpot.
Step 2
Cook on low heat for 3 hours, stirring occasionally.
Step 3
Serve warm with pita bread or crackers
How To Make Baked Reuben Dip
To make this easy reuben dip recipe in the oven (vs a slow cooker), mix all ingredients in a large bowl and add them to a baking dish greased with cooking spray. Bake the dip at 350 degrees F for 20 minutes, or until heated through.
Recipe Notes & Tips
- Thinly sliced corned beef works great! You can replace it with another sliced deli meat like ham or roast beef, if desired.
- Don’t skip on the tangy sauerkraut or Swiss cheese. These are essential, integral components.
- I love sauerkraut, but you can reduce the amount called for in the recipe by half if sauerkraut isn’t necessarily your thing. See the section below on how to use up the extra sauerkraut in your fridge.
- This is best cooked on the low setting for a long period to really give a chance for the flavors to combine and develop.
- After it’s done cooking, keep the dip on the warm setting for parties.
- Mix all ingredients in a large bowl and add to a greased baking dish to make this in the oven. See instructions in the section above.
- Serve with pita bread, rye bread, crackers, chips, pretzels, or veggie sticks.

Do you suggest using the Bavarian (sweet) kraut or the regular? ps, I discovered you blog after camping next to your RV in Rice Co last summer.
Wow Kathie, that is really cool! You should’ve come over and said hi. I’m glad you checked out Pip and Ebby. I use regular sauerkraut in this recipe, but it might be a fun twist to try a sweeter version! Let me know if you give it a shot. Thanks for reaching out!
One of my favorites with Rye Chips
Do you use deli lunch meat corn beef or cook a corn beef and slice it up?
In this recipe, I used deli meat. However, if I had some leftovers from a cooked meal, I would definitely enjoy using it for this recipe too! Thanks for asking!
What about the thousand island. You think I could just squeeze a little on top?
Um, yes! Sounds great!
Do you drain the sauerkraut?
Thank you
You can put the entire can in! Thank you for asking.
Can this be made and frozen?
Hi Donna, I have never tried to but I think you should be able to! A nice slow warm up when you take it out of the freezer would be good.
Hi TMT! I am not a huge fan of Swiss, either, and I promise you won't taste that "bite" that it can leave in your mouth. If you are totally opposed to trying it, mozzarella or havarti would work great, as well! Let me know what you use and how it turns out!
Megan
Love the idea of this, but i HATE swiss…any other thoughts on another cheese? Provolone, white cheddar, mozzarella, Havarti (not sure in a dip)?
