Ingredients

  • 4 large tomatoes sliced
  • 8 cherry or grape tomatoes halved
  • 2 avocados peeled, pitted and sliced
  • 1/2 of a red onion sliced
  • 4 large basil leaves thinly sliced
  • 4 tbsp olive oil
  • 4 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  • Layer the following on each of four serving plates: Slices from one tomato, a few grape or cherry tomatoes, slices from 1/2 of an avocado, a few red onion slices, 1/4 of the basil, 1 tablespoon olive oil, 1 tablespoon red wine vinegar and salt/pepper.
  • Cover tightly until ready to serve; serve chilled!
