    Why This Recipe Works

    The weather in Minnesota has been so nice that I’m slow in snapping into the Fall mindset. Usually by now my apple peeler feels overworked and my Fall Food To Make list has been scripted, but I’m still enjoying tomatoes and salads and anything summery.

    Even my Fall-induced scary movie gorging isn’t yet in full swing. I hear that tomorrow will bring more of a Fall feel and I’m ready for it! Bring on squash and apples and all the things!

    Everything I make in our RV requires simplicity, including this yummy salad. It is simple, but it’s also possibly the prettiest thing I’ve ever consumed. And it is absolutely bursting with fresh tummy-pleasing flavors.

    A few people have shared home-grown garden tomatoes with me recently and this salad was the perfect way to use them up. Lots of chopping, but no cooking. The flavors are so delicious!

    Recipe Ingredients

    Tomatoes – Select your favorite tomato. Beefsteak, heirloom or tomatoes on the vine are all delicious when in season.

    Cherry or grape tomatoes – Slice them in half to give each bite a perfect amount of all the food.

    Avocados – When you prefer dicing them or slices, the creaminess is a nice addition.

    Red onion – Perfect for fresh salads, just use half and save the other half for what to put in guacamole.

    Basil leaves – These can be found in the refrigerated section of the grocer if you don’t have a plant of your own.

    Red wine vinegar – Just the right amount of flavor in this liquid to drizzle on your salad.

    How To Make Best Tomato Salad

    Step 1 – Layer the following on each of four serving plates: Slices from one tomato, a few grape or cherry tomatoes, slices from 1/2 of an avocado, a few red onion slices, 1/4 of the basil, 1 tablespoon olive oil, 1 tablespoon red wine vinegar and salt/pepper.

    Step 2 – Cover tightly until ready to serve; serve chilled!

    Didn’t I say this was simple? This is a great salad to prepare when entertaining, but it’s also perfect for lunch or a dinner side dish.

    My personal opinion on this is you can use any kind of organic tomato but I love the flavor from roma tomatoes. You can roast roma tomatoes to really prepare them to take on lots of flavor ahead of making soup and sauces.

    Ingredients

    • 4 large tomatoes sliced
    • 8 cherry or grape tomatoes halved
    • 2 avocados peeled, pitted and sliced
    • 1/2 of a red onion sliced
    • 4 large basil leaves thinly sliced
    • 4 tbsp olive oil
    • 4 tbsp red wine vinegar
    • Salt and pepper to taste

    Instructions
