Cauliflower Rice With Mushrooms Recipe

Replace rice with this veggie-packed, fresh cauliflower rice with mushrooms side dish. It’s easy to make, done in 15 minutes from start to finish. Packed with flavor and texture from mushrooms and herbs, this recipe pairs well with many meals to make a complete, healthy dinner!

Ingredients

  • 2 tbsp olive oil
  • 3 cups cauliflower finely chopped
  • 3 cups mushrooms finely chopped
  • 1/4 cup fresh cilantro finely chopped
  • 1 lime juiced
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Heat olive oil in a skillet over medium heat. Add cauliflower, mushrooms, cilantro, lime juice, salt and pepper. Cook for 10 minutes, stirring occasionally, until veggies are softened.
  • Remove from the heat, top with extra lime juice and serve immediately!

Notes

  • I love the addition of cilantro, but if it's not a favorite of yours, replace the with an equal amount of flat-leaf parsley.
  • If you use a food processor to rice the veggies, do this in batches and be careful not to over-puree. This will create a watery, mushy mess.
  • If excess moisture is present, press a paper towel into the mixture to absorb it.
  • Add a touch of delicious indulgence by sprinkling Parmesan cheese over the top just before serving.
  • Optional flavor add-ins: soy sauce, fresh garlic, green onions, bell peppers or other fresh herbs such as fresh thyme or fresh parsley.
  • Lime juice and lemon juice can be used interchangeably.
  • Spruce up the dish by adding a splash of hot sauce.
  • Use in place of fried rice for a side dish with less sodium.
