In a medium bowl, combine mayo, mustard, parsley, vinegar, sugar, salt and pepper. Mix well.
In a large bowl, combine the green and red cabbage and carrots and mix. Add the dressing and stir until coated. Cover and refrigerate until ready to serve!

Make cole slaw your own! Here are a few optional ingredients you can throw into your next batch: Chia seeds, chopped apples, poppy seeds, dried cranberries or raisins, sliced almonds.
Adding 1/2 teaspoon of celery seed would taste great in this slaw!
Shred cabbage in a food processor for easy prep.
Sprinkle black pepper over the top just before serving for the perfect balance of flavors.
Top with sliced green onions or diced red onions for an added zing.
