    Throwing together a delicious coleslaw recipe should be easy and simple. This coleslaw with apple cider vinegar recipes contains shredded cabbage, creamy vinaigrette dressing and it is not loaded with mayo! This will be your go-to slaw for a dinner side, picnic fare and fish tacos.

    Why This Recipe Works

    Apple cider vinegar coleslaw is one of my favorite easy recipes for a handful of reasons: 

    • Sometimes it’s the simple dishes like this one that go best on a potluck table.
    • A few simple ingredients and a few minutes are all that’s required to pull this homemade coleslaw recipe together.
    • This ridiculously easy recipe is the perfect party food because it takes just a few minutes to make. 
    • This easy coleslaw tastes great on a plate with just about any food in the world.
    • There’s just a hint of sugar in the recipe, making it a healthy coleslaw.
    • Although it’s a mayo-based coleslaw, it’s not loaded with mayonnaise making it a healthier version of classic coleslaw.
    • Freshly sliced green and purple cabbage turn this vinegar coleslaw recipe into a complete recipe!

    Recipe Ingredients

    Mayo – One of the things I love about this recipe is that the coleslaw dressing is not loaded with mayo! If you’d like to decrease the amount of mayo in the recipe even more, replace some or part of it with plain yogurt.

    If you are looking for more of a creamy coleslaw, you can definitely increase the amount of mayonnaise used (do not exceed 1 cup).

    Fresh parsley – Use other fresh herbs, such as chives or cilantro.

    Mustard – Replace the yellow mustard with a spicy or dijon mustard for an extra punch of flavor. Or omit this ingredient entirely if you are not a mustard fan.

    Cabbage and carrots – I’ve made this recipe using a pre-packaged coleslaw mix and it works in a pinch. The freshness and flavor is so much better when you use fresh cabbage and carrots, creating a delicious crunchy slaw.

    Apple cider vinegar – Replace the apple cider vinegar with white distilled, white wine or red wine vinegar, but the apple cider variety adds the perfect flavor.

    Sweetener – Since just a touch of sugar is used in the recipe, feel free to add a bit of honey or maple syrup to sweeten things up without loading the dish with sugar.

    How To Make Coleslaw With Apple Cider Vinegar

    When you realize how quick and easy it is to make this recipe, you’ll enjoy it more often! It is the perfect side dish for any meal.

    Step 1

    In a medium bowl, combine: mayonnaise, yellow mustard, Italian parsley, apple cider vinegar, granulated sugar, salt and pepper. Mix well.

    Step 2

    In a large bowl, combine shredded green cabbage and red cabbage and matchstick-cut carrots and mix.

    Step 3

    Add the mayonnaise vinegar mixture to the cabbage mixture and stir until coated. Cover and refrigerate until ready to serve!

    Recipe Notes

    • Make cole slaw your own! Here are a few optional ingredients you can throw into your next batch: Chia seeds, chopped apples, poppy seeds, dried cranberries or raisins, sliced almonds.
    • Adding 1/2 teaspoon of celery seed would taste great in this slaw!
    • Shred cabbage in a food processor for easy prep.
    • Sprinkle black pepper over the top just before serving for the perfect balance of flavors.
    • Top with sliced green onions or diced red onions for an added zing.

    Apple Cider Vinegar Substitutes

    Replace apple cider vinegar with any of the following options, in equal amounts:

    • Distilled white vinegar
    • White wine vinegar
    • Red wine vinegar
    • Rice wine vinegar
    • Lemon juice
    • Lime juice

    How To Cut Cabbage

    Remove and discard the outermost leaves and cut the very bottom of the stem off. Place the head of cabbage on its end where you cut and slice down the center vertically. Cut each half lengthwise.

    Remove the core and stem by cutting a wedge out of each quarter. Place each cabbage quarter onto a flat portion so it is lying flat and slice 1/4-inch strips, creating shredded cabbage.

    Ingredients

    • 1/2 cup mayonnaise
    • 2 tbsp yellow mustard
    • 1/4 cup Italian parsley finely chopped
