Ingredients

  • 32 oz sweet corn frozen
  • 1/2 lb bacon cooked and chopped
  • 8 oz green chilies (Two 4-oz cans)
  • 1/2 cup sour cream
  • 1 cup pepperjack cheese shredded
  • 1 cup cheddar cheese shredded
  • 8 oz cream cheese cubed
  • 1/4 cup parmesan cheese
  • 3 tbsp cilantro finely chopped, for topping

Instructions

  • In a 6-quart slow cooker, combine the corn, bacon, chiles, sour cream, pepperjack, cheddar, cream and Parmesan cheese. Stir, cover and cook on low heat for 2 hours, stirring once or twice throughout.

  • Cook on high heat for an additional 30 minutes and transfer to a serving dish. Sprinkle with cilantro. Serve warm as a side dish or serve with chips or crackers as an appetizer!

Notes

Fiesta Corn Dip Flavor Boosters

  • Sprinkle lime juice over the top just before serving.
  • Add a can of diced tomatoes for some tomato flair.
  • A can of black beans adds nice color and an incredible depth of flavor.
  • Fresh minced garlic or 1/2 teaspoon garlic powder or garlic salt will spruce up this dish.
  • Sprinkle with Parmesan cheese and chopped green onions or red onions. 
  • Sprinkle cotija cheese over the top for an added flavor boost.
  • A little salt and black pepper sprinkled over the top is super delicious!
  • A few tablespoons of taco seasoning mixed in tastes fantastic.
  • Add chopped green or red bell peppers or chopped spinach.
  • For extra heat, add 1/2 teaspoon chili powder, 1/4 teaspoon cayenne pepper, a splash of hot sauce or diced fresh jalapeños.
