Text Ingredients

Instructions

  • Coat the inside of a Crockpot with nonstick cooking spray. Add the steel-cut oats, water and salt. Stir to combine.
1 cup steel-cut oats, 4 cups water, 1/2 tsp salt
  • Nestle the peeled sweet potato halves on top of the oat mixture with the cut sides facing up. Do not stir them into the oats.
    1 medium sweet potato
  • Sprinkle the brown sugar, cinnamon and nutmeg over the exposed sweet potato flesh. Divide the butter between the halves, placing it directly on top.
1/4 cup brown sugar, 1 tsp ground cinnamon, 1/4 tsp ground nutmeg, 2 Tbsp salted butter
  • Cover and cook on Low for approximately 7 hours, until the oats are cooked and the sweet potato mashes easily. If the sweet potato is still firm in the center, cover and continue cooking until tender.
  • Use a potato masher to mash the sweet potato directly into the oatmeal. Add the vanilla and stir thoroughly until evenly combined.
    1 tsp vanilla extract
  • Let stand for 5–10 minutes. Spoon into bowls and serve with your choice of toppings.
maple syrup, chopped pecans, brown sugar, milk or cream, granola

Notes

This recipe was made in a 6-quart Crockpot. Cooking time may vary with other slow cookers.
  • Use one medium sweet potato. Two may overpower the oats and make the finished oatmeal heavier than intended.
  • Use regular steel-cut oats. Rolled oats, instant oats and quick-cooking steel-cut oats are not direct substitutes for this cooking time.
  • Leave the sweet potato halves on top of the oat mixture with the cut sides up.
  • The sweet potato may retain its shape during cooking but should mash very easily when done.
  • Cooking time varies by slow cooker and sweet potato size. Check tenderness before mashing.
  • Add milk, cream or water after cooking if you prefer a thinner consistency.
The sweet potato should collapse easily under your potato masher. Check the center for tenderness rather than judging by its appearance.
