This sweet potato oatmeal starts with a peeled sweet potato cut into just two pieces. No roasting, boiling or dicing first! Nestle the halves over steel-cut oats, add brown sugar, spices and butter, then let your Crockpot handle breakfast while you sleep. In the morning, mash everything together right in the pot.

I’ve been experimenting with what I can put into overnight oatmeal without creating more prep work. After my overnight apple oatmeal and crockpot banana oatmeal, I had to see what a sweet potato would do. This one surprised me!

The sweet potato brings so much natural sweetness that the finished oatmeal doesn’t taste overly sugary. It’s warm, buttery and cinnamon-spiced, with plenty of room to add maple syrup if your bowl needs a little more sweetness.

I use one medium sweet potato to keep the balance between the potato and oats. Peeling it before cooking also means there’s nothing to fish out in the morning. Just mash, stir and grab a spoon!

    Why This Recipe Works

    • The sweet potato and oats cook together. You don’t need cooked sweet potato on hand or a second pot to prepare it.
    • There’s very little prep. Peel one sweet potato and cut it in half lengthwise. That’s the entire vegetable prep.
    • Breakfast cooks overnight. A few minutes of evening prep leaves just mashing and stirring for the morning.
    • You control the finishing sweetness. The sweet potato and brown sugar sweeten the batch, then everyone can customize their own bowl.

    Ingredient Notes

Steel-cut oats: Use regular steel-cut oats for this recipe. Old-fashioned rolled oats, instant oats and quick-cooking steel-cut oats aren’t interchangeable with them for this seven-hour cooking method.

Sweet potato: Choose one medium orange-fleshed sweet potato. Peel it and cut it in half lengthwise so you have two broad surfaces for the butter, brown sugar and spices. Save an especially large sweet potato for another recipe.

Water: The oats cook in water, with milk or cream saved for serving. This keeps the ingredient list simple and lets everyone adjust the consistency of their bowl.

Light brown sugar: A little brown sugar complements the sweet potato without making the oatmeal taste like dessert. Taste the finished batch before adding extra sweetener.

Cinnamon and nutmeg: These give the oatmeal its warm, spiced flavor.

Salted butter: Place it directly on the sweet potato halves before cooking.

Vanilla extract: Stir this in after cooking, when you mash the sweet potato into the oatmeal.

How to Make Sweet Potato Oatmeal in the Crockpot

Water pours over a mound of sesame seeds in a dark bowl.
    1. Prepare the oat mixture. Coat the inside of your Crockpot with nonstick cooking spray. Add the steel-cut oats, water and salt, then stir to combine.
Two slices of sweet potato soaking in light-colored liquid in a pan.
    1. Add the sweet potato. Peel the sweet potato and cut it in half lengthwise. Nestle the halves on top of the oats with the cut sides facing up. Leave them on top rather than stirring them into the mixture.
Two slices of sweet potato topped with brown sugar crumble and a pat of butter in a slow cooker.
    1. Add the toppings. Sprinkle the brown sugar, cinnamon and nutmeg over the exposed sweet potato flesh. Divide the butter between the two halves.
Slices of sweet potato cooking in a pot with oats and spices, steam rising.
    1. Cook overnight. Cover and cook on Low for approximately 7 hours, until the oats are cooked and the sweet potato is very tender.
    1. Mash and stir. Use a potato masher to mash the sweet potato directly into the oatmeal. Add the vanilla and stir thoroughly to distribute the sweet potato, spices and butter.

    Megan’s Tips

    • Stick with one medium sweet potato. It adds sweetness and body while keeping the oatmeal from becoming too heavy with potato.
    • Peel before cooking. You’ll be able to mash everything together without removing any skins.
    • Check tenderness before mashing. The halves may still look intact when you lift the lid. They’re ready when they collapse easily under the masher. If the centers are firm, cover and continue cooking.
    • Use Low for this overnight method. Slow cookers vary, so treat seven hours as a guide and check for cooked oats and a mashable sweet potato.
    • Adjust the texture after stirring. Let the oatmeal rest first, then add a splash of milk, cream or water if you prefer a looser consistency.

    Equipment

A slow cooker and a potato masher do most of the work here. I use my potato masher to mash the softened sweet potato directly into the oatmeal, so there’s no need to transfer anything to a blender.

If your slow cooker has a nonstick coating, use a masher that’s safe for that surface.

    Topping Ideas and Simple Variations

    • Maple pecan: Add chopped pecans, a drizzle of maple syrup and a splash of milk.
    • Extra creamy: Stir milk or cream into individual servings.
    • A little crunch: Sprinkle granola over the oatmeal just before eating.
    • Sweeter bowls: Add a little more brown sugar or maple syrup after tasting.
    • Nut-free serving: Skip the pecans and choose a nut-free granola if needed.

    Storing and Reheating

Transfer leftover oatmeal to shallow, airtight containers and refrigerate within two hours. Store in the refrigerator for 3–4 days. Food Safety and Inspection Service

Reheat individual portions in the microwave or warm the oatmeal in a saucepan, stirring and adding a little water or milk as needed. It thickens as it cools, so loosen it to your preferred consistency and heat thoroughly.

    Frequently Asked Questions

Do I need to cook the sweet potato first?

No! Start with a raw sweet potato that has been peeled and cut in half lengthwise. It cooks alongside the oats and gets mashed into the oatmeal at the end.

Can I use rolled oats instead of steel-cut oats?

Use regular steel-cut oats for this recipe. Rolled oats cook differently and aren’t a direct substitute for the seven-hour overnight method.

Why is my sweet potato still holding its shape?

It can look intact even when it’s tender enough to mash. Press into the center with a fork or potato masher. If it collapses easily, it’s ready. If the center is still firm, replace the lid and continue cooking.

Is sweet potato oatmeal very sweet?

This version has a balanced sweetness from one medium sweet potato and ¼ cup of brown sugar spread across six servings. Add maple syrup or extra brown sugar to individual bowls if you prefer it sweeter.

    Why is my oatmeal thick?

Oatmeal thickens as it rests and cools, and the mashed sweet potato adds body. Stir in a little milk, cream or water after mashing or reheating until it reaches the consistency you like.

Is this the same as overnight oats?

This is hot oatmeal cooked overnight in a slow cooker. It’s different from refrigerated overnight oats, which soften through soaking without cooking.

    More Oatmeal Recipes to Try

    • Overnight Apple Oatmeal: Whole peeled and cored apples cook alongside the oats, then get mashed in before serving.
    • Crockpot Banana Oatmeal: Another overnight breakfast with minimal prep, starting with whole peeled bananas.
    • Crockpot Pumpkin Oatmeal: Put a small pie pumpkin to work in your next batch.
    • Instant Pot Apple Oatmeal: A pressure cooker option for days when you didn’t start breakfast the night before.

    Notes

This recipe was made in a 6-quart Crockpot. Cooking time may vary with other slow cookers.
    • Use one medium sweet potato. Two may overpower the oats and make the finished oatmeal heavier than intended.
    • Use regular steel-cut oats. Rolled oats, instant oats and quick-cooking steel-cut oats are not direct substitutes for this cooking time.
    • Leave the sweet potato halves on top of the oat mixture with the cut sides up.
    • The sweet potato may retain its shape during cooking but should mash very easily when done.
    • Cooking time varies by slow cooker and sweet potato size. Check tenderness before mashing.
    • Add milk, cream or water after cooking if you prefer a thinner consistency.
The sweet potato should collapse easily under your potato masher. Check the center for tenderness rather than judging by its appearance.
