Ingredients

  • 1/2 cup skim milk
  • 2 eggs
  • 1/2 cup seasoned breadcrumbs
  • 1/2 cup Parmesan cheese grated
  • 24 oz dill pickle spears

Instructions

  • Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper and set aside.
  • In a medium bowl, whisk together the milk and eggs.
  • In a separate medium bowl, combine the breadcrumbs and cheese. Mix well.
  • Pat each pickle spear completely dry with paper towels (this step is super important!). Coat the pickles in the egg mixture, followed by the breadcrumb mixture.
  • Place the coated pickles onto the prepared baking sheet. You might have extra breadcrumbs and egg mixture. If so, throw a second batch together if you have extra pickle spears!
  • Bake in the preheated oven for 20 to 25 minutes, or until crispy and golden brown. Serve with yogurt dill dressing.

Notes

  • Use any variety of milk from skim to whole.
  • Use a plant-based milk and omit the parmesan or use a vegan version if you have dairy allergies.
  • Use large, shallow bowls or pie plates that will accommodate the size of the pickles for best breading.
  • You can also make this recipe with dill pickle chips. Cook time may be different.
  • You might have extra breadcrumbs and egg mixture. If so, throw a second batch together if you have extra pickle spears!
  • You can make these in the Air fryer. Cook them at 400 degrees for 8 minutes, flip, then cook for another 3-5 minutes until crisp and golden brown. If you are using this cooking method, place them in a single layer and don't overcrowd them. Cook them in a couple small batches if necessary.
