Easy Buffalo Chicken Dip (4 Ingredients)

This easy buffalo chicken dip uses rotisserie chicken, cream cheese, cheddar and buffalo wing sauce for a creamy, scoopable appetizer. Just mix, top with cheese and bake. A longtime party and weekend favorite for Dan and me!

Ingredients

  • 2 cups rotisserie chicken shredded
  • 8 oz cream cheese softened
  • 1 1/2 cups cheddar cheese shredded, divided
  • 1 1/2 cups buffalo wing sauce such as Frank’s RedHot Buffalo Wings Sauce
  • blue cheese dressing optional, for serving

Instructions

  • Preheat the oven to 350°F. Lightly grease a round baking dish or a 9×9-inch square baking dish.
  • In a large bowl, combine the shredded chicken, softened cream cheese, 1 cup cheddar cheese and buffalo wing sauce. Stir until evenly combined, pressing any cream cheese lumps against the bowl with your spoon.
    2 cups rotisserie chicken, 8 oz cream cheese, 1 1/2 cups cheddar cheese, 1 1/2 cups buffalo wing sauce
  • Spread the mixture evenly into the prepared baking dish. Sprinkle the remaining ½ cup cheddar cheese over the top.

  • Bake uncovered for 15–20 minutes, or until the center reaches 165°F and the cheese has melted. Allow additional time if needed.
  • Serve warm with tortilla chips, celery sticks or carrot sticks. Offer blue cheese dressing or ranch on the side, if desired.

Notes

  • Sauce: Use prepared buffalo wing sauce. Frank’s RedHot Buffalo Wings Sauce is an option; Frank’s Original Cayenne Pepper Sauce is a different product. Choose mild wing sauce for less heat.
  • Chicken: Any shredded, fully cooked chicken works in place of rotisserie chicken.
  • Cheese: Freshly shredded cheddar generally melts more smoothly, but pre-shredded cheese works when you need the shortcut.
  • Optional toppings: Add thinly sliced green onions or blue cheese crumbles after baking.
  • Make ahead: Assemble, cover and refrigerate up to one day ahead. Bake uncovered at 350°F until the center reaches 165°F, allowing extra time for the cold mixture. Follow your baking dish manufacturer’s guidance for refrigerator-to-oven use.
  • Storage: Refrigerate promptly in a shallow, airtight container. Use within 3–4 days of when the chicken was originally cooked. Reheat to 165°F.
    Main tip: Soften the cream cheese before mixing so it incorporates easily without leaving lumps.
