Equipment

Ingredients

  • 1 cup regular steel cut oats
  • 2 1/2 cups water
  • 2 tsp vanilla extract
  • 3 medium firm apples peeled, cored and spiral-sliced, with each apple left together
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 3 Tbsp salted butter cut into pats
  • Milk or cream for serving
  • Additional cinnamon, brown sugar or maple syrup optional, for serving
  • Chopped fresh apple optional, for serving

Instructions

  • Generously coat the inside of a 6-quart Instant Pot with nonstick cooking spray or softened butter.
  • Add the steel-cut oats, water and vanilla extract. Stir thoroughly, making sure no oats remain stuck to the bottom.
1 cup regular steel cut oats, 2 1/2 cups water, 2 tsp vanilla extract
  • Place the prepared apple spirals upright in the oatmeal mixture, keeping each apple together.
    3 medium firm apples
  • In a small bowl, combine the brown sugar, cinnamon and nutmeg. Sprinkle over the tops of the apples, allowing some to fall into the centers and surrounding oatmeal.
1/4 cup brown sugar, 1 tsp ground cinnamon, 1/2 tsp ground nutmeg
  • Place the butter pats over the apples and distribute any remaining butter over the oatmeal. Do not stir.
    3 Tbsp salted butter
  • Secure the lid and set the valve to Sealing. Cook on High Pressure for 15 minutes. The pot will take approximately 10 minutes to reach pressure before the cooking countdown begins.
  • Follow your model’s instructions for releasing pressure when cooking oatmeal. Instant Pot recommends natural release because oatmeal can foam and splatter. See My Testing Notes below for the method I tested.
  • Once the float valve drops, carefully remove the lid. Use a potato masher or sturdy spoon to gently break apart the tender apples, then stir everything together.
  • Serve warm, adding milk or cream to reach your preferred consistency. Top with chopped fresh apple for a little crunch, extra cinnamon or a drizzle of maple syrup, if desired.
Milk or cream, Additional cinnamon, brown sugar or maple syrup, Chopped fresh apple

Notes

  • My tested method: I used a 6-quart Instant Pot, 3 medium spiral-sliced apples left together and regular steel-cut oats. I cooked them for 15 minutes on High Pressure, with approximately 10 minutes for pressure buildup, followed by a quick release. The oatmeal was ready to serve immediately after mashing and stirring, with no resting time needed.
  • Pressure release: Instant Pot recommends natural release for oatmeal because it can foam and splatter. Follow your model’s instructions. Natural release has not been tested with this version and may produce softer oats and apples. Allow additional time for pressure release.
  • Apple selection: Choose 3 similarly sized, medium, firm apples. Honeycrisp and Granny Smith make a delicious sweet-tart combination. Completely unsliced apples have not been tested with this timing.
  • Oats: Use regular steel-cut oats. Rolled oats, instant oats and quick-cooking steel-cut oats are not direct substitutes.
  • Consistency: Add milk or cream to individual bowls as desired. The oatmeal thickens as it stands and after refrigeration.
  • Original version: Use 2 peeled, cored and chopped apples. Replace the water with 1½ cups almond milk and 1 cup apple cider or juice. Keep the remaining ingredient amounts the same and stir everything together before cooking. The original pressure-cooking time was 10 minutes on High Pressure. Follow your model’s oatmeal pressure-release guidance.
  • Storage: Refrigerate in shallow, airtight containers within 2 hours and use within 3 to 4 days. Reheat to 165°F throughout, adding a splash of milk or water to loosen.
Leave each apple spiral together. After peeling, coring and spiral-slicing the apples, place them upright in the oats without separating the slices. Once cooked, just a couple of gentle mashes will blend the tender apples into the oatmeal.
