Ingredients

  • 1 cup basil leaves fresh
  • 1 cup spinach fresh
  • 3 cloves garlic chopped
  • 1/4 cup almonds or walnuts, pecans or cashews
  • 2/3 cup olive oil extra virgin
  • 1/2 cup Parmesan cheese grated
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

Instructions

  • Place basil, spinach, garlic and almonds into a food processor and pulse until coarsely chopped.
  • With food processor running, gradually add olive oil and process until smooth.
  • Transfer to a bowl and stir in Parmesan cheese. Season with salt and black pepper. Refrigerate until ready to serve.

Notes

  • Throw in additional fresh herbs, as desired, such as chives, parsley or cilantro, for an extra fresh flavor.
  • Create a dairy-free pesto by omitting the cheese entirely.
  • Add a squirt or two of lemon juice or lemon zest for an added touch of freshness.
  • For a nut-free pesto recipe, replace the nuts in the recipe with 3 tablespoons grated Pecorino Romano cheese!
