Cook sausage in a skillet over medium heat until no longer pink, breaking apart into chunks. Drain and add sausage to a crockpot.
Add cream cheese, Rotel tomatoes, black olives and 1 cup of the cheddar cheese. Mix well and cook on high heat for 2 hours, stirring once throughout.
Sprinkle the remaining 1 cup of cheddar cheese over the top in an even layer and cook for an additional 15 minutes, or until cheese is melted. Top with green onions and serve with chips or crackers!
- Add fresh minced garlic or garlic powder to the sausage for an extra punch of flavor.
- Rotel can be replaced with another variety of diced tomatoes, if desired.
