Slow Cooker Corn Dip With Cream Cheese

This slow cooker corn dip with cream cheese combines sweet corn, bacon, green chiles and plenty of melted cheese. Serve it warm with sturdy tortilla chips for an easy party appetizer or enjoy it as a creamy side dish.

Ingredients

  • 32 oz frozen sweet corn unthawed
  • 1/2 lb bacon cooked and chopped
  • 8 oz diced green chilies (Two 4-oz cans)
  • 1/2 cup sour cream
  • 1 cup shredded pepperjack cheese
  • 1 cup shredded cheddar cheese
  • 8 oz cream cheese cubed
  • 1/4 cup grated Parmesan cheese
  • 3 tbsp finely chopped cilantro for topping

Instructions

  • Combine the ingredients. Add the frozen corn, cooked bacon, green chiles, sour cream, pepper Jack, cheddar, cream cheese and Parmesan to a 6-quart slow cooker. Stir to combine.

  • Cook on Low. Cover and cook on Low for 2 hours, stirring once or twice as the cheeses melt.
  • Finish on High. Stir well, cover and cook on High for an additional 30 minutes, or until the dip is hot, creamy and fully combined.
  • Add the topping. Sprinkle with chopped cilantro and serve warm with sturdy tortilla chips or crackers. The dip can also be served as a creamy corn side dish.

Notes

  • Do not thaw the corn. Add it directly to the slow cooker from the freezer.
  • Shred the cheese from a block when possible. It melts more smoothly than packaged pre-shredded cheese.
  • Adjust the heat. The green chiles and pepper Jack create mild warmth. Add diced jalapeño or hot sauce for a spicier dip.
  • Taste before adding salt. The bacon, Parmesan and shredded cheeses may provide plenty already.
  • Keep it warm for serving. After cooking, turn the slow cooker to Warm and stir the dip occasionally.
    Add the corn straight from the freezer. There is no need to thaw it, and the cold corn helps everything heat gradually as the cheeses melt together.
