If you are wondering what to do with leftover apples, these baked cinnamon apple slices are the perfect sweet, gluten free any-time dessert or snack. Enjoy apple pie minus the pie crust! Great way to use up apples with just a few simple ingredients.
Fill a large bowl halfway with water and add the lemon juice. Add the apples to the lemon water as they are sliced.
1/2 lemon, 6 apples
Preheat oven to 350 degrees F. Coat a square baking dish with cooking spray and set aside. In a small bowl, combine the brown sugar, cinnamon, nutmeg and butter. Mix well.
1/2 cup brown sugar, 2 tsp cinnamon, 1 tsp nutmeg, 4 tbsp butter
Remove the apples from the water and pat dry. Place the apples in a single layer inside the prepared baking dish. Top with the sugar mixture and spread as evenly as possible.
Bake uncovered in the preheated oven for 30 minutes. Serve immediately, either with vanilla ice cream or as a solo dessert.
Notes
Use a paring knife to core apples and peel them or I have found that I love using my apple corer for a quick turn around.

Add a bit of apple cider or juice to the mixture for an extra sweet, concentrated flavor.
You can make this recipe in a slow cooker, too! Combine all ingredients and mix well. Cover and cook on low heat for 4 hours, stirring occasionally.
