Butterbeer Recipe (Universal Studios Copycat)

This easy Butterbeer recipe combines cream soda, vanilla ice cream and butterscotch topping to recreate the sweet, creamy flavor of the classic cold Butterbeer served at Universal Orlando. Makes approximately six 8-ounce drinks.

Ingredients

  • 8 ice cubes
  • 2 cups vanilla ice cream
  • 24 oz cream soda
  • 3/4 cup butterscotch topping (6-oz jar) plus more for drizzling on top
  • whipped cream for topping

Instructions

  • Add the ice cubes, vanilla ice cream and butterscotch topping to a blender. Pour in the cream soda last.
    8 ice cubes, 2 cups vanilla ice cream, 24 oz cream soda, 3/4 cup butterscotch topping
  • Begin blending on low speed, then increase the speed and blend just until smooth. Avoid overblending so the cream soda retains some of its carbonation.

  • Pour the Butterbeer into six glasses.
  • Top each glass with whipped cream and a drizzle of butterscotch topping. Serve immediately.

Notes

  • Serve immediately. Butterbeer is best directly after blending, while it is cold, smooth and frothy.
  • Add the cream soda last. It may foam when blended, so leave sufficient room at the top of the blender and begin at low speed.
  • Avoid overblending. Blend only until smooth so the cream soda retains some carbonation.
  • Use vanilla ice cream. Other ice cream flavors will change the classic butterscotch, cream soda and vanilla combination.
  • Adjust the consistency if needed. Add a small splash of cream soda if the drink is thicker than you prefer.
  • Finish with the toppings. Whipped cream and a drizzle of butterscotch topping give the drink its rich, creamy finish.
    Add the cream soda last and blend only until smooth. This limits foaming and helps the Butterbeer retain some of its carbonation.
