This oatmeal with dates cooks overnight in the crockpot for a warm, buttery breakfast sweetened with whole Medjool dates. Steel-cut oats, cinnamon and dates simmer together for about seven hours, then get mashed and stirred into creamy oatmeal. No brown sugar needed!

Dan and I honestly did not think this would turn out as good as it did. I’ve been making all kinds of overnight oatmeal, but leaving out the brown sugar felt like a bit of a gamble. Could a cup of dates really sweeten the whole pot?

They absolutely did. This was insanely good, and we could not stop eating it. Dan isn’t a huge sugar fan, so he especially loved this version. The dates soften enough to mash right into the oats, giving you sweetness throughout instead of just a few sweet bites.

If you’ve tried my overnight apple oatmeal, the method will feel familiar. This version makes four servings, and in both of my tests, it needed a few tablespoons of milk or cream after cooking to get the consistency just right.

Creamy oatmeal with oats, beans? Looks like oats, cinnamon, and chunks of dates in a bowl with a lad.

    Why This Recipe Works

    • The dates do the sweetening. Soft Medjool dates get mashed into the oatmeal after cooking, spreading their sweetness throughout the pot.
    • No chopping required. Remove the pits and add the dates whole. They soften while the oats cook.
    • Breakfast cooks overnight. A few minutes of prep and approximately seven hours on Low give you warm oatmeal in the morning.
    • You control the finish. Leave small pieces of dates for texture and stir in milk or cream until it’s as creamy as you like.

    Ingredients for Oatmeal with Dates

Steel-cut oats: Use traditional steel-cut oats. Quick-cooking steel-cut oats, rolled oats and instant oats are not direct substitutes for this overnight cooking time and liquid ratio.

Medjool dates: Use soft, pitted Medjool dates, measuring 1 cup after removing the pits. Check each date even if the package says pitted. Leave them whole before cooking. Both of my tests used Medjool dates, so that’s what I recommend for this recipe.

Water: Use water to cook the oats, then add milk or cream after cooking. I don’t recommend replacing the water with milk for this overnight method.

Salt: Helps balance the sweetness of the dates.

Ground cinnamon: Adds warm flavor that goes so well with the dates, butter and vanilla.

Salted butter: Place it on top before cooking. It adds richness to the finished oatmeal.

Vanilla extract: Stir it in after cooking, just before mashing the dates.

Milk or cream: Add a tablespoon at a time after mashing and stirring. A few tablespoons were enough in my tests, but you can adjust to your preferred consistency.

How to Make Oatmeal with Dates in the Crockpot

Oats soaking with water pour and sesame seeds in a slow cooker or pot.
    1. Prepare the oatmeal base. Generously coat the inside of a 6-quart slow cooker with nonstick cooking spray. Add 1 cup traditional steel-cut oats, 4 cups water and ½ teaspoon salt. Stir to combine.

    1. Add the whole dates. Check that all pits have been removed, then scatter 1 cup soft pitted Medjool dates over the oat mixture. Measure after pitting and leave the dates whole. No chopping needed!

    1. Cook overnight. Cover and cook on Low for approximately 7 hours, until the oats are tender and the dates are very soft. The oatmeal may look dry on top before you mash and stir it.

    1. Let stand and serve. Turn off the heat and let stand for 5–10 minutes. Add another splash of milk or cream if needed, then spoon into bowls and top with toasted pecans or extra cinnamon.

    Recipe Tips

Use a 6-quart slow cooker and make one batch. That’s the size and quantity I tested. Readers have reported unsuccessful results using mini slow cookers and doubling the recipe in a 6-quart cooker. Changing the batch size or cooker size can affect how the oatmeal cooks, so I recommend following the recipe as written.

Mash and stir before adding more liquid. This oatmeal looked drier when I opened the lid than my apple or banana oatmeal. Give everything a good mash and stir first, then add milk or cream gradually.

Distribute the dates throughout the pot. Mashing breaks them down, but stirring is what gets that sweetness into every serving.

Use the texture as your guide. Seven hours is approximate. The oats should be tender and the dates should mash easily. If your slow cooker runs hot, try a daytime batch first so you can check the timing.

Expect it to thicken as it stands. Another splash of liquid can loosen it again before serving or reheating.

    Variations and Toppings

    • Add crunch: Sprinkle chopped toasted pecans or walnuts over individual bowls.
    • Make it extra creamy: Finish with an additional splash of milk or cream.
    • Add more spice: Sprinkle a little extra cinnamon over each serving.
    • Try a dairy-free version: Substitute dairy-free butter and use an unsweetened dairy-free milk after cooking. I tested the recipe with salted dairy butter.

    How to Store and Reheat

Refrigerator: Divide leftovers into shallow containers and refrigerate within 2 hours. Store covered for 3–4 days.

Freezer: Freeze cooled oatmeal in individual portions in freezer-safe containers for up to 3 months for best quality. Leave a little space for expansion.

Reheating: Thaw frozen portions overnight in the refrigerator. Reheat in the microwave or in a saucepan, stirring and adding a splash of milk or water as needed. Heat until hot throughout.

    Frequently Asked Questions

What size slow cooker should I use? Can I double the recipe?

Use a 6-quart slow cooker for one batch. Readers have reported unsuccessful results with mini slow cookers and with doubling the recipe in a 6-quart cooker. I haven’t tested other sizes or a doubled batch, so I recommend sticking with the equipment and amounts listed.

Can you sweeten oatmeal with dates instead of brown sugar?

Yes! In this recipe, 1 cup of soft Medjool dates sweetens the oatmeal without brown sugar, honey or maple syrup. Mash the softened dates after cooking and stir thoroughly to distribute their sweetness.

Do I need to chop the dates first?

No. Remove all pits, measure the dates after pitting and add them whole. They soften during cooking and get mashed directly into the oatmeal afterward.

Can I use a different type of date?

I tested this recipe twice with soft Medjool dates. Other varieties may differ in sweetness and texture, so I recommend Medjool dates for the result described here.

Can I use rolled oats instead of steel-cut oats?

Use traditional steel-cut oats for this recipe. Rolled oats, instant oats and quick-cooking steel-cut oats need different cooking times and are not direct substitutes for this seven-hour method.

Can I replace the water with milk?

I don’t recommend it for this overnight recipe. Use water during cooking, then stir in milk or cream after mashing the dates. Add it a tablespoon at a time until the oatmeal reaches your preferred consistency.

Is this the same as overnight oats?

This is hot oatmeal cooked overnight in a slow cooker. Refrigerated overnight oats usually use rolled oats softened by soaking without cooking.

    • Refrigerate leftovers within 2 hours and use within 3–4 days. Add a splash of milk or water when reheating.
Mash the dates and stir thoroughly before adding milk or cream. This distributes the sweetness and helps you judge how much extra liquid the oatmeal needs.
