This is the perfect weeknight dinner for busy families. Filled with egg noodles and two kinds of cheese, ground hamburger and lots of flavor, you will be filled up! It is EASY, comforting and there’s not a single person at the table who won’t love it!
Dan and I used to make a version of this dish years ago. We have often remembered it fondly, but for some reason we haven’t replicated it until now. So silly. Our original version contained jalapeño peppers and I recall them adding the perfect zing. This version was made sans jalapeños in order to not burn the mouths of our young ones. I have found myself many times over the past few days crouched down in front of the open fridge, fork in hand, sneaking just “one more” teeny bite. It’s a keeper. We will not be waiting another seven years to make it again!

Cheesy Noodle Bake
Ingredients
- 12 oz. package egg noodles
- 1/2 large onion chopped
- 1 lb. ground beef
- salt and pepper to taste
- 2 14.5 oz. can diced tomatoes undrained
- 8 oz. package cream cheese cut into 10 slices
- 8 oz. frozen corn kernels
- 1 cup cheddar cheese shredded
- 2 tbsp. fresh flat-leaf parsley chopped
Instructions
- Preheat oven to 350 degrees F. Coat a 9×13 baking dish with cooking spray and set aside. In a large saucepan, cook egg noodles in boiling water until al dente. Drain and rinse. In a medium skillet, cook the ground beef, onions, salt and pepper over medium heat until the meat is no longer pink and the onions are soft. Remove from heat.
- Layer the prepared baking dish as follows: ground beef-onion mixture, half of the noodles, one can of tomatoes, cream cheese, corn, remaining half of the noodles, second can of tomatoes, shredded cheddar cheese and parsley.
- Bake covered in the preheated oven for 45 minutes. Remove cover and bake for an additional 15 minutes.

At what layer would I add the soup? Going to try this delicious looking recipe!
Had good flavor and liked the "built-in" veggies. Would add liquid of some kind or try the cheddar or cheese sauce next time, as the top layer of noodles was dry.
This was pretty good. I didn't have egg noodles, so I used bow tie pasta. I also didn't have onion, but it still worked. I did add about a cup of milk and some Velveeta cheese. Yummy recipe.

This was delicious. I also added the can of cheddar cheese soup. Didn't care much for corn but I'm not a big corn person. My kids loved it. Might add some jalapeños for extra spice next time. Great recipe!

Hi Ed! I can't remember what I did to the jalapenos, if anything, before adding them. Years of brain fog due to lack of sleep has clouded my memories a bit. 🙂 If I had to guess, I'd say maybe I added them to the ground beef-onion mixture. If you end up adding them, let me know how it turns out!

Being empty nesters now (it will happen to you sooner than you think) we don't have to worry about spicy foods. When you did add the jalapenos did you cook them with the beef and onions or add them raw? How many did you use? Thanks.
