This salad is super easy to put together! It is so satisfying and you’ll enjoy every bite of this crunchy and flavorful salad. Great side dish or solo meal. Also a great option to bring to your next gathering!
Five years ago I had just gone back to work after a 10-week maternity leave. We welcomed a second precious son. But I was SAD. Like, so totally devastatingly depressed about not being at home with my newborn and three-year-old. I remember saying to my (still) bestest friend, “Why can’t I be one of those lucky people who writes a blog for a living?!” And she said, “You can be. Do it!”
Literally the next day, I started this blog. A year and a half after that day, I lost my full-time job as a graphic designer (a blessing in disguise at the time). From that moment on I have been blessed enough to divide my time between being a stay-at-home mom, photographer and food blogger. I can honestly say that I could not ask for a better set of jobs.
THANK YOU for being so wonderful and supportive and awesome for the past five years. Without YOU, this job would not be nearly as awesome.
This recipe was put inspired by my mom. She was going to be visiting from California. It is because of her that I have labeled myself the queen of salads and sandwiches. The day before she arrived, I asked her for an idea for a salad to make while she was here. Here is the simple yet YUMMY creation she came up with. Thank you, MOM!
HOW TO MAKE GRAPE PECAN SUMMER SALAD WITH A DELICIOUS VINAIGRETTE
I hope this becomes an all time favorite healthy salad for you like it did for me!
STEP 1
In a large bowl, combine the mixed greens, grapes, goat cheese and pecans. Toss all together.
STEP 2
In a small bowl, whisk together the raspberry jam, red wine vinegar, olive oil, salt and pepper. Cover and refrigerate both bowls until ready to serve.
STEP 3
Just before serving, add the dressing and toss into the salad greens until coated.
RECIPE TIPS

This salad doesn’t have any meat and it’s perfect that way. But if you want to add some protein, shredded rotisserie chicken is an awesome addition.

Chopped red onion and avocado are excellent additions or substitutions to this meal.

Candied pecans or 1 tsp of chia seeds are a good additions to your salad.

Green Salad With Grapes And Pecans And Raspberry Vinaigrette
Ingredients
- 6 cups Romaine lettuce rinsed and chopped
- 2 cups red grapes halved
- 4 oz. container crumbled goat cheese
- 1 cup pecans chopped
DRESSING
- 1/4 cup raspberry jam
- 1/4 cup red wine vinegar
- 2/3 cup extra-virgin olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the lettuce, grapes, cheese and pecans. Toss.

First of all thank you for making that difficult decision to write your food blog which I truly enjoy! In the last five years I decided to leave my corporate rat race (high paying) job in restaurant management and manage our local high school cafeteria. The pay is a third of what I used to make with the wonderful upside being summers off to garden and can, a regular eight hour day and working six minutes from home. This dream and subsequent change helped teach me what's really important in life, such a gift!
