BLT Salad Recipe

Delicious way to enjoy a BLT without the bread! Magically transformed into a healthy salad!

First and foremost, I picked a winning comment from my last post. Pam G, look for an email from me with details! Can we please go to Ireland together?

I know I’ve mentioned this about a hundred times before, but I love salads. Especially in the summer, I could eat a salad every day. I’ll be honest about where the inspiration for this one came from. Bacon was on sale. Yep. So we bought a ton of bacon and Dan and I said to each other, “What in the world are we going to do with all of this bacon?!” And then we both said simultaneously, “BLTs!” And after making a few BLT Sandwiches with Avocados and Eggs I suggested, BLT SALAD! What could possibly be better than BLT + SALAD? Iced Coffee, that’s what. Iced coffee consumed on a Tuesday afternoon is better than almost anything.

One of the great things about salads is that measurements don’t need to be exact. The following measurements are suggestions.

To make one giant BLT Salad, throw the following ingredients into a medium bowl:

2 cups romaine lettuce, rinsed and chopped

1/2 tomato, sliced

1/2 avocado, peeled, pitted and sliced

1/2 cup cooked bacon, chopped

1/2 cup croutons

Toss and drizzle dressing of your choice over the top. Ranch is a great choice for this one, in my opinion.

Ingredients

  • 2 cups Romaine lettuce rinsed and chopped
  • 1/2 tomato sliced
  • 1/2 avocado peeled, pitted and sliced
  • 1/2 cup cooked bacon chopped
  • 1/2 cup croutons
  • Salad dressing for drizzling

Instructions

  • In a medium bowl, combine the lettuce, tomato slices, avocado slices, bacon and croutons. Toss and drizzle with salad dressing of choice. Chill until ready to serve.
