Before we moved into our new house, I envisioned the unpacking process going much more quickly and smoothly. It has left me with little time for much else. But I’m so excited about having a KITCHEN…I love it I love it I LOVE IT. I have been wanting to simplify pie-making for months and was super happy with how these Pumpkin Hand Pies turned out. No fork needed for these babies. Grab ’em straight from the baking sheet and sink your teeth in!
Here’s how good they were. I had them sitting on a baking sheet on my stove top just like in the top photo of this post. EVERY time I turned around one of my boys was stealing another bite. So if you are asked to bring pumpkin pie to Thanksgiving dinner this year? I’ve got your back!

HOW TO MAKE PUMPKIN HAND PIES
Preheat oven to 350 degrees F. Spray a baking sheet with cooking spray or put aside a parchment lined baking sheet.
In a medium bowl, combine pumpkin pie filling, sugar, pumpkin spice and cinnamon. Mix well.
Place the pie crusts on a flat surface and cut each in half. Spoon 1/4 of the pumpkin mixture onto half of each half circle, leaving room for sealing edges. Spoon cream cheese onto remaining halves, also leaving room for sealing. Fold each half circle in half and seal edges.
Place hand pies on prepared baking sheet and brush tops with an egg wash. Sprinkle with cinnamon sugar and pumpkin pie spice and bake in the preheated oven for 25 minutes, or until golden brown. Let cool for 5 minutes before eating or allow them to cool to room temperature!
RECIPE TIPS: HOW TO MAKE HAND PIES THAT ARE IRRESISTIBLE!
To dress up your hand pies, crimp the edges of the pie with fork tines for a decorative look.
Sift some powdered sugar over the tops of the pies once they’ve cooled a few minutes to give them a final topping.
If you feel inclined, you can use a biscuit cutter and cut two pieces of the pie crust to make one round smaller pie. It’s fun to have smaller amounts for little kids to enjoy or for a party.

SUBSTITUTE FOR PUMPKIN PUREE
Equal parts of cooked, mashed sweet potatoes and butternut squash is a great substitution and you might not even be able to tell the difference!
