The whirlwind of sickness and vacation and new puppy and spring break is calming down. My house is still a glorious mess most of the time, but I’ve been able to chip away at the nooks on occasion.
Yesterday I put together a huge Fruit Salad and I consider that a pretty large feat. Fruit salads take time! But they are so delicious. I love always having something healthy to snack on.

And I’m tellin’ ya, there is nothing easier than this Lemon Butter Sea Scallops recipe. It is done in 10 minutes and requires only a few ingredients. And OH WOW are they tasty! Dan and I inhaled this meal in a flash. Quicker than Buddy can chew a flip-flop to bits.
While I cooked the scallops I let some quinoa simmer and green beans steam. DELISH! The scallops would go great with any grain and veggie. Be sure not to overcook them! They cook super fast (2-3 min per side), so don’t use this time to paint your toenails or throw the laundry in the dryer.

Lemon Butter Sea Scallops
Ingredients
- 4 tbsp. butter
- Juice from 1/2 lemon
- 1/4 cup fresh flat-leaf parsley chopped
- 2 cloves garlic minced
- salt and pepper to taste
- 8 sea scallops thawed and patted dry
Instructions
- Melt the butter in a skillet over medium heat. Add lemon juice, parsley, garlic, salt and pepper. Cook for 2 minutes, stirring. Add the scallops in a single layer and cook for 2-3 minutes on each side (be careful not to overcook!).
- Pair scallops with veggies and/or grain of choice. Pour sauce from skillet over the top and serve immediately!
