These Lemon Butter Sea Scallops are a healthy, SUPER quick and delicious dinner! Done in less than 15 minutes and they require only a few ingredients.

The whirlwind of sickness and vacation and new puppy and spring break is calming down. My house is still a glorious mess most of the time, but I’ve been able to chip away at the nooks on occasion. Yesterday I put together a huge Fruit Salad and I consider that a pretty large feat. Fruit salads take time! But they are so delicious. I love always having something healthy to snack on.

Evenings can get pretty crazy in our house. It is a time of meltdowns, dinner prep and homework refusals. All while the items in my house are being chewed on by our newest member. Easy dinners are VITAL these days. And I’m tellin’ ya, there is nothing easier than this Lemon Butter Sea Scallops recipe. It is done in 10 minutes and requires only a few ingredients. And OH WOW are they tasty! Dan and I inhaled this meal in a flash. Quicker than Buddy can chew a flip-flop to bits.

While I cooked the scallops I let some quinoa simmer and green beans steam. DELISH! The scallops would go great with any grain and veggie. Be sure not to overcook them! They cook super fast (2-3 min per side), so don’t use this time to paint your toenails or throw the laundry in the dryer.

My cute lil’ chewer is snoring, so I must go and be productive! Enjoy this delicious little dinner recipe and have a great rest of your week, my friends!
