This recipe uses lots of fresh ingredients for maximum flavor you are sure to love. Feel free to decrease or increase the spice measurements to fit your family’s personal tastes.
Olive oil – or other neutral oil to saute the vegetables
Garlic – use fresh for best flavor
Bell peppers – use a variety of colors for an extra appealing dish with versatile crunch flavors
Green onions – also called scallions or spring onions
Jalapeno peppers – use fresh or jarred. Omit these or use “coolapenos” for a mild recipe.

How to Make the Best Taco Soup
This soup is surprisingly simple to make and comes together in less than 30 minutes!
Step 1
Heat olive oil in an extra large skillet or Dutch oven over medium heat. Add garlic, bell pepper, green onions, jalapeño peppers, taco seasoning, salt and pepper. Cook until soft and fragrant, 3 to 4 minutes. Add parsley and cilantro and cook for an additional 2 minutes.
Step 2
Add the chicken stock, tomatoes, corn, beans and green chilies to the skillet and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer for 30 minutes, stirring occasionally. Five minutes before the soup is finished, add the chicken.
Step 3
Ladle into serving bowls and top with cheese, sour cream and tortilla strips.
How To Thicken Taco Soup
You can thicken taco soup a few different ways. Here are the best options.
Simmer it longer and uncovered – allow nature to take its course by simple cooking your soup uncovered for a longer period of time at a simmer or a low rolling boil. This will evaporate the liquid and thicken the soup as it cooks.
Make a cornstarch slurry – mix equal parts cornstarch and water and mix well to combine fully. Add the slurry to your simmering soup and stir well. Allow it to continue to cook for a few more minutes to thicken. Repeat in smaller measurements until you reach your desired texture.
Add more soup stuff! – Simply add more vegetables, an extra can of beans, or more meat to give your soup a heartier texture.

How to Store Leftover Taco Soup
Allow the soup to cool completely before storing. Once it has cooled completely, transfer to an
airtight container and place in the refrigerator for up to 7 days.

Easy Taco Soup Recipe with Black Beans
Ingredients
- 3 tbsp olive oil
- 4 cloves garlic minced

- 1/2 cup toppings shredded cheese, sour cream, etc
Instructions

Wow! I made this tonight for my New Year's Eve dinner and it was fabulous! I did change a couple of things but it was still so darn good! I used ground beef instead of chicken and added a little taco seasoning mix and used cream cheese to garnish instead of grated cheese. It is so delicious! I will no doubt make this again and again.
