Summer is approaching, yay! I always get giddy this time of year when I begin anticipating pool parties and lunches in the back yard and fresh vegetables. Summer weather is great, but I looooove summer food.
I have so many favorite types of food that I enjoy eating in the summer and creating lunch wraps that are jam-packed with veggies is one of my favorite things.
One of the things I love about this particular wrap is that you can easily make it healthier by loading it up with veggies of your choice. I like testing the boundaries of my wrap casings to see how much I can pack in!
I confess to being a proud wrap over-stuffer. There isn’t a better way! If you love the flavors involved in this recipe (AND WHO WOULDN’T!?), promise me you’ll give this easy recipe a try!
Recipe Ingredients
Tortillas – I use burrito-size flour tortillas for this recipe, but use what you like! Feel free to replace flour tortillas with the wrap of your choice. This gives you a chance to make the wrap a bit healthier, if that is something you’re wanting!
Chicken – Either cook chicken tenders or breasts and shred them for this recipe or simply pull meat from a pre-made Rotisserie chicken!
Cilantro – If you are not a fresh cilantro fan, feel free to forego this ingredient or replace it with another fresh herb such as Italian parsley or chives.
Cheese – If you don’t have mozzarella on hand, use any variety of cheese that melts well, such as provolone, cojack, muenster or cheddar cheese.
Dressing – Use store-bought dressing or quickly make your very own batch of Avocado Ranch Dressing! To go a completely different route, use blue cheese dressing instead!
Extras – Additional ingredients to consider adding are green onions, garlic powder, hot sauce, onion powder, buffalo sauce, red onion, taco seasoning or blue cheese crumbles.
How to Make This Crispy Chicken Wraps Recipe
Step 1
Place two burrito-size flour tortillas on a flat surface. In a strip down the center of each tortilla, layer as follows:
1/2 cup cooked, shredded chicken, a small handful of quartered cherry or grape tomatoes, 1 tablespoon freshly chopped cilantro, a small handful of shredded Mozzarella and 2 tablespoons Avocado Ranch Dressing. Wrap tightly.
Step 2
Heat oil in a non stick skillet over medium heat. Place the wraps in the pan in a single layer and cook for 2 minutes on each side, or until golden brown in color. Cut in half and serve with extra dressing!

- Turn this tasty meal into an Avocado Ranch Chicken Salad by cutting the entire wrap up into small pieces and throwing it into a bowl.
- Top the wrap with a dollop of sour cream or a drizzle of dressing! Or you can serve either in a small bowl on the side for dipping.
- For a carb-free and gluten-free meal, ditch the wrap! In a large bowl, combine all filling ingredients and mix well. Throw on top of a bed of iceberg or romaine lettuce for extra crunch!
- Make the wrap vegetarian by omitting the rotisserie chicken. Pick an extra crispy, crunchy vegetable or two, chop them up and add them to the wrap!
