    Why This Recipe Works

    Summer is approaching, yay! I always get giddy this time of year when I begin anticipating pool parties and lunches in the back yard and fresh vegetables. Summer weather is great, but I looooove summer food.

    I have so many favorite types of food that I enjoy eating in the summer and creating lunch wraps that are jam-packed with veggies is one of my favorite things.

    One of the things I love about this particular wrap is that you can easily make it healthier by loading it up with veggies of your choice. I like testing the boundaries of my wrap casings to see how much I can pack in!

    I confess to being a proud wrap over-stuffer. There isn’t a better way! If you love the flavors involved in this recipe (AND WHO WOULDN’T!?), promise me you’ll give this easy recipe a try!

    Recipe Ingredients

    Tortillas – I use burrito-size flour tortillas for this recipe, but use what you like! Feel free to replace flour tortillas with the wrap of your choice. This gives you a chance to make the wrap a bit healthier, if that is something you’re wanting!

    Chicken – Either cook chicken tenders or breasts and shred them for this recipe or simply pull meat from a pre-made Rotisserie chicken!

    Cilantro – If you are not a fresh cilantro fan, feel free to forego this ingredient or replace it with another fresh herb such as Italian parsley or chives.

    Cheese – If you don’t have mozzarella on hand, use any variety of cheese that melts well, such as provolone, cojack, muenster or cheddar cheese.

    Dressing – Use store-bought dressing or quickly make your very own batch of Avocado Ranch Dressing! To go a completely different route, use blue cheese dressing instead!

    Extras – Additional ingredients to consider adding are green onions, garlic powder, hot sauce, onion powder, buffalo sauce, red onion, taco seasoning or blue cheese crumbles.

    How to Make This Crispy Chicken Wraps Recipe

    Step 1

    Place two burrito-size flour tortillas on a flat surface. In a strip down the center of each tortilla, layer as follows:

    1/2 cup cooked, shredded chicken, a small handful of quartered cherry or grape tomatoes, 1 tablespoon freshly chopped cilantro, a small handful of shredded Mozzarella and 2 tablespoons Avocado Ranch Dressing. Wrap tightly.

    Step 2

    Heat oil in a non stick skillet over medium heat. Place the wraps in the pan in a single layer and cook for 2 minutes on each side, or until golden brown in color. Cut in half and serve with extra dressing!

    Uses for Leftover Chicken

    If you use Rotisserie chicken meat for this recipe and have leftovers, here are a few ideas about how to use it up!

    • Add it to your next salad.
    • Add it to your next batch of chicken noodle soup!
    • Use it in chicken enchiladas!
    • CHICKEN BURRITO BOWLS! Chipotle style!
    • Throw it into cheesy quesadillas or even a grilled cheese sandwich.

    Recipe Notes

    • Turn this tasty meal into an Avocado Ranch Chicken Salad by cutting the entire wrap up into small pieces and throwing it into a bowl.
    • Top the wrap with a dollop of sour cream or a drizzle of dressing! Or you can serve either in a small bowl on the side for dipping.
    • For a carb-free and gluten-free meal, ditch the wrap! In a large bowl, combine all filling ingredients and mix well. Throw on top of a bed of iceberg or romaine lettuce for extra crunch!
    • Make the wrap vegetarian by omitting the rotisserie chicken. Pick an extra crispy, crunchy vegetable or two, chop them up and add them to the wrap!

    Chicken wraps are a great spring or summer food, typically served as a light lunch. Great sides to go along with them would be chips, French fries, sweet potato fries coleslaw, fruit salad, leafy green salad, pasta salad or potato salad.

    How to make chicken wraps with lettuce

    To make chicken wraps with lettuce, simply substitute the outer tortilla with large iceberg or romaine lettuce leaves.

    Are chicken wraps healthy

    Chicken wraps are a mostly healthy light meal, but the amount of dressing and cheese you add might take away a few healthy points. For an even healthier meal, use half the amount of dressing listed in the recipe and omit the cheese.

    How to roll chicken wraps

    For best results, place ingredients in a single strip down the center of a tortilla. Wrap one long edge over the top, followed by a short edge, followed by the remaining long, then short. Wrap as tightly as possible without causing ingredients to bulge out or tortilla to break.

    Can chicken wraps be frozen

    Yes, chicken wraps can be frozen. Assemble and cook as directed, then let cool. Place in sealed ziploc bags and freeze for up to 3 months for best results.
