The idea for this salad came to me as I perused through my archives recently and found this delicious Cherry Gazpacho. Since creating my cookbook I’ve constantly been thinking of ways to reinvent recipes. I suddenly saw this delicious fresh soup in salad form.

COOKING TIPS FOR THIS SALAD
This salad is delicious and best enjoyed the day its made. However, if you want to prepare some of it ahead of time, you can chop up the fruit and vegetables and don’t mix in the dressing until you are ready to serve. Keep the chopped ingredients in an air-tight container in the refrigerator for best results.
WHAT IS GAZPACHO FRUIT SALAD
Fruit Gazpacho is a cold soup made of blended fruit and vegetables, a spin on the classic vegetable gazpacho, popular in Spain. This Gazpacho fruit salad recipe is a spin off on that idea, but rather than blending the ingredients together, instead enjoying chunks of fresh ingredients mixed together with a simple flavorful red-wine vinaigrette. Sweet cherries, like the common and popular Bing and Rainier are great for eating, cooking and baking from May through August. If you are lucky enough to live near a cherry orchard, picking your own would be amazing! You could pop them in your mouth as you drove home – they are like candy! I’m sure I’d struggle to get any into a dessert or meal though.

Cherry Gazpacho Salad
Ingredients
- 1 cup Bing cherries chopped, seeds removed
- 1 cup Rainier cherries (seeds removed; substitution: additional Bing cherries)
- 8 oz. container cherry or grape tomatoes halved
- 1 cucumber peeled and chopped
- 2 bell peppers (yellow, orange or red), seeded and chopped
- 1/4 cup fresh basil finely chopped
- 3 cloves garlic finely minced
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- Salt and pepper to taste
Instructions
- Combine all ingredients in a large bowl. Mix well and refrigerate until ready to serve!
