Instant Pot Creamed Corn is super easy to make and a delicious side dish for any meal (including Thanksgiving!). Great when reheated later, too!

    Why This Recipe Works

I never liked creamed corn as a kind because it always came straight from a can. The canned version? Uhh, not the tastiest thing in the world, in my opinion. Which is why I waited so long to try making Instant Pot Creamed Corn.

I’m so sad it took me so long to discover how delicious this stuff is!

This is the PERFECT side to make for a busy meal or holiday gathering because it ever-so-quietly cooks while you do your thing in the kitchen with the other recipes.

The extra great thing about it is that if you forget about it once it’s done and if it gets cold, just reheat it! No one will ever know.

50+ Make-Ahead Recipes For Your Holiday Table

Do you feel overwhelmed just thinking about planning a holiday menu? Then you anticipate the exhaustion that comes after the meal has been eaten?

Within each recipe in this ebook are tips for making the recipe ahead of time to open up space for the people you’re excited to spend the holiday with. Sample menus included, along with mouth-watering photos and tried-and-tested recipes!

    Recipe Ingredients

    • Corn – Use frozen corn or a canned variety for this recipes. For added flavor, cut fresh corn off the cob after it has been cooked. Cook corn on the cob in your Instant Pot first!
    • Cream cheese – This cheese is going to help thicken up the sauce and so creamy.
    • Salted butter – I recommend cooking and baking with salted butter in my dishes. It’s easy to reduce the salt otherwise used in the dish.
    • Milk – Combined with the natural starch of the corn and cheese, this will make a great sauce for your creamed corn to be served in.
    • Green onions – Both the white and green portion of the onion are edible but just slice up the green ends for a light flavor in this dish.
    • Bacon – This is an optional add-in, but let’s agree that bacon makes everything better!

    Step 2

Place the cover on the pot and set timer to 3 minutes on high pressure (pressure cook setting). It will take the IP around 22 minutes to build up pressure before it begins cooking.

    Step 3

When cooking is done, do a quick release and allow the float valve to drop.

    Step 4

Give the corn a good stir and transfer to a serving dish. Top with green onions and bacon (if using). Serve immediately!

    Recipe Notes

    • To make this a healthier side, cut the amount of cream cheese and butter used in the recipe in half (or more).
    • Topping the corn with bacon and green onions is optional, but I highly recommend NOT skipping this!

Why Does It Take My Instant Pot So Long To Pressurize?

The time leading up to actual cook time may seem long and even confusing (“What is going ON in there?!”), but it’s an important part of the process! The Instant Pot is working on building up the appropriate amount of pressure that it will be cooking the food at.

It handles liquids and solids differently and also fresh and frozen differently, so the time can vary. Most recipes take between 10 and 25 minutes to build up pressure.

    FAQ About Corn

Are sweet corn and corn on the cob the same?

Yes. Sweet corn is harvested from a cob where the corn kernels grow. However, there are different kinds of corn and sweet corn is just one.

    Are sweet corn healthy?

One of the health benefits of enjoying sweet corn is that it has a naturally high fiber content. Beyond helping you feel full longer, it also helps with digestion and is thought to decrease the risk of heart disease.

    When is sweet corn ready?

Sweet corn is ready to harvest about mid summer and into the fall. If you see the silky hair on the stalk start to darken, you know the corn is almost ready. You want a plump, yellow kernel when you shuck the leaves off the vegetable.

    Can sweet corn be frozen?

Yes, you can freeze your harvest of sweet corn. Once you remove it from the cob, lay it on top of a piece of parchment paper in a single layer and set it in the freezer for an hour. Then you can scoop it up into a zip loc bag or container to place in the freezer until ready to use.
