    This easy, cheesy potato casserole is loaded with all the savory goodies! Make this potato casserole with sour cream as a side dish any night of the week. Top with baked potato toppings of your choice!

    Why This Recipe Works

    Potatoes are one of those ridiculously simple ingredients that can magically (and mysteriously) be transformed into the most creamy, comforting dishes. And they are so versatile, am I right?! It’s such an unassuming food at first glance.

    Some of my favorite side dishes of all time stem from the delicious potato and this casserole is included in that list of faves. This dish is like enjoying a loaded baked potato. It is a great side for holiday or week night meals. Enjoy! This is a keeper!

    Recipe Ingredients

    Baby red potatoes – I love this potato for this casserole. However, any variety potato can be used from russet, gold and yukon; any potatoes you have on hand.

    Bacon – In this recipe, cook up a nice crispy bacon as a topping to give it a good crunch.

    Sour cream – This is a great way to help make your potatoes creamy and mix well with any toppings you add.

    Cheddar cheese – Cheese melts beautifully on this casserole and if you only pick one topping, let it be this one.

    Garlic – This is a good flavor booster but if you’re not a fan of garlic, this can be reduced or omitted.

    Green onions – While onions are cooked into this dish, adding them as a topping is easy to do and is a mellow flavor to add as a finishing touch.

    How To Make Potato Casserole with Sour Cream

    Step 1

    Preheat oven to 375 degrees F. Coat a 9×13 baking dish with cooking spray and set aside.

    Boil potatoes in a large saucepan for 20 minutes, or until a fork can be easily inserted into the centers. Drain and return to saucepan.

    Step 2

    Meanwhile, heat the olive oil in a skillet over medium heat. Add onion, garlic, salt and pepper, and cook for 3 minutes, or until the onion is soft and fragrant.

    Add the onion mixture to the potatoes, along with milk, sour cream and sprinkle cheese on top (1 1/2 cups only!). Stir until combined.

    Step 3

    Pour into the prepared baking dish and spread in an even layer and top with the remaining 1/2 cup cheese. Sprinkle bacon and green onions over the top.

    Recipe Notes

    • Use 3 large potatoes, 5 medium potatoes or 10-12 baby potatoes for this casserole.
    • Go as crazy with the toppings as you’d like. Anything that tastes great on a baked potato (such as chives) will also taste amazing in this potato casserole!
    • After baking, consider adding extra toppings such as extra shredded cheddar cheese and sour cream.
