    Chicken Artichoke Pasta Skillet Recipe

    This easy, delicious Artichoke Pasta Skillet dinner is done in less than 30 minutes! Use a rotisserie chicken, add your pasta and cheeses and you’ll enjoy a hot, filling meal. Add it to your dinner rotation!

    Is anyone else having an “off” week? Now that I’m thinking about it we enter most years like a lion, as they say. Three years ago (I cannot believe it has been three years) brought devastating (yet relieving) job loss. Last year brought one of the most difficult surgeries/recoveries Elijah has ever had and this year we are ringing in the new year with all kinds of stress, anxiety and sleep-deprivation.

    Guess what goes well with stress? FOOD! Oh how I love food and I have been a tornado in the kitchen lately. I am SEVEN recipes behind in posting, which is a great food-blogger problem to have.

    One of my specialties lately is skillet creations! I like to scrounge through the fridge and pantry and throw a handful of yummy ingredients into my good ol’ cast iron skillet. This dinner was beyond easy and way yummier than I expected it to be. It required only FIVE ingredients and it is done in less than THIRTY minutes.

    Heat olive oil in a skillet over medium heat. Add chicken and pasta, both already cooked. Although, if you don’t have already cooked chicken like I did, cut it into chunks and cook it in the skillet while your pasta is cooking. Or better yet, use the meat from a Rotisserie chicken.

    Can I insert a little secret here that will save you tons of time with tons of different recipes? Instead of baking and shredding chicken, pull the meat from a pre-cooked Rotisserie chicken! This is my absolute favorite way to quickly have shredded chicken meat that is ready to be put into a recipe.

    Throw a little salt and pepper on top and cook for 3 to 4 minutes, or until heated through.

    Add diced tomatoes and artichokes.

    Cook for 5 minutes, or until warm. Add mozzarella cheese.

    Cook, stirring frequently, until cheese is melted.

    Serve immediately!

    Ingredients

    • 3 tbsp. olive oil
    • 2 cups cooked chicken shredded or cubed
    • 2 cups cooked pasta
    • Salt and pepper to taste
    • 8.5 oz. can artichoke hearts drained and chopped
    • 14.5 oz. can diced tomatoes
    • 1 cup shredded mozzarella cheese

    Instructions

    • Heat olive oil in a skillet over medium heat. Add cooked chicken, pasta, salt and pepper. Cook, stirring occasionally, for 3 to 4 minutes, or until heated through.
    • Add artichokes and diced tomatoes. Cook, stirring occasionally, for 5 minutes. Add the cheese and stir until melted. Serve immediately!
