These delicious Ice Cream Cookie Sandwiches are a delicious spring or summer treat. Use red, white and blue chocolate M&M’s for an added a touch of patriotic fun!
Summer treats are a massive hit in our home. My boys love anything that is frozen and that also contains sugar. Enjoying summery treats is one of their favorite pastimes. Can eating sugar be considered a pastime? When I neglect our freezer and do not have it well-stocked, you’d think I had just told them sugar had suddenly been deleted from the entire world.
I have made a few batches of these ice cream sandwiches over the past few years and they always get devoured very quickly. I like to wrap them individually in plastic wrap so hungry little hands can reach into the freezer and grab them out easily. This is a great frozen dessert to bring to a summer party on a hot day. They are perfect for Fourth of July gatherings, as well, because the red, white and blue M&M’s make them festive and patriotic. We love M&M’s ice cream sandwiches and hope you do, as well!
HOW TO MAKE M&M’S ICE CREAM COOKIE SANDWICHES
STEP 1 – MAKE THE COOKIES!
Preheat your oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.
In a large mixing bowl or stand mixer, start creaming butter, brown sugar, sugar, egg and vanilla together. Mix until the mixture is creamy. In a medium bowl, combine the flour, baking soda, baking powder and salt. Gradually add to the butter mixture and stir until just combined. Fold in 1 cup of M&M’s milk chocolate candies.
Roll the dough into 1-inch balls and place onto the prepared baking sheets. Press down slightly on each ball of dough. Bake in the preheated oven for 12 minutes, or until the edges are light-golden brown. Let cool completely.
STEP 2 – MAKE THE SWIRLY ICE CREAM!
In a medium bowl, combine a 1.75-quart container of softened vanilla ice cream with 1 cup M&M’s candies. Place in the freezer for 15 minutes, remove and stir to create a swirled effect. Return the ice cream to the freezer for a minimum of 2 hours.
STEP 3 – ASSEMBLE THE ICE CREAM SANDWICHES!
Scoop one large scoop of ice cream between two delicious cookies. Wrap each sandwich in plastic wrap. Repeat with all cookies and ice cream. Freeze for a minimum of 2 additional hours and serve!

Creamy vanilla ice cream is my favorite way to fill these sandwich cookies, but strawberry or chocolate ice cream work great, too. Use a reduced fat variety to cut back on fat!
