Why This Recipe Works
Don’t you love recipes that can be served any time of the year and that always make people swoon? Fruit Pizza is one of those recipes. I see this dessert/appetizer/party food at 4th of July parties just as often as I see them at holiday gatherings.
The cookie crust in this recipe is my FAVORITE and the cream cheese frosting will cause a little yelp to slip out of your mouth. Get as creative as you wish with the fruit! You can go the rainbow route or just pick and choose a few favorites and come up with fun designs on the cookie.
The glaze on the top adds an extra touch of delicious sweetness and helps the fruit to stay shiny and fresh.
Recipe Ingredients
Cookie crust – Replace the cookie crust with pre-made sugar cookie dough for an even easier recipe. If you go this route, you may have to purchase a few tubes to extend across the pan.
Fresh fruit – As one who enjoys creating pretty things, this is my favorite part. Fruit is so colorful and gorgeous! I tend to try recreating the rainbow, so I like using strawberries, raspberries, mandarin oranges, pineapple, kiwi, grapes, blueberries and blackberries.
Fruit that browns easily (such as apples and bananas) might not be the best choice for fruit pizza, but if you use them be sure to dunk them in lemon water first.
Glaze – Instead of using a glaze to spread over the pizza, change it up by using strawberry preserves, apricot preserves or chocolate syrup. Also, if you have glaze leftovers, don’t throw them. Drizzle it over the pizza just before serving!
How To Make Fruit Pizza
Make The Cookie Crust
In a medium bowl, combine the butter, sugar, egg and vanilla. Beat on medium speed until creamy and free of lumps. In a separate bowl, combine the flour, baking powder and salt. Mix well. Gradually add to the butter mixture and beat until combined. Form dough into a disc, wrap in plastic wrap and refrigerate for 1 hour.
Preheat oven to 350 degrees F. Coat a 12-inch pizza pan with cooking spray. Press the dough into an even layer on the prepared pan, going all the way to the edges. Bake in the preheated oven for 18-20 minutes, or until golden brown. Let cool completely.
Prepare The Frosting
In a medium bowl, combine the cream cheese, butter, powdered sugar, vanilla extract and milk. Using the whisk attachments, beat on medium-high speed for 3 minutes or until light and fluffy.
Make The Glaze
In a small saucepan, combine the sugar, orange juice, lemon juice and cornstarch. Bring to a boil, then reduce to medium-low heat and simmer for 2 minutes, stirring constantly. Remove from heat and let cool.
Assemble The Pizza
Spread the frosting in an even layer over the cookie. Arrange the fruit on top in desired pattern and brush the glaze over the top. Refrigerate until ready to serve. Just before serving, cut into slices!
Recipe Notes
- Change things up by rolling out the dough and using 4-inch round cookie cutters to create mini fruit pizzas! Bake for 8 minutes at 350 degrees, or until edges are very lightly golden.
- If you don’t have a pizza pan, use a half sheet pan instead.
FAQ About Fruit Pizza
Fruit pizza can definitely be made ahead of time and stored in the fridge for up to one day and still be fresh and ready for the party. Be sure to wrap it in plastic wrap first. You could also prepare the crust and cover it tightly with saran wrap, storing it at room temperature one day ahead of time. The cream cheese frosting can also be made ahead of time and stored separately in the fridge. Simply put it together the day you’re ready to serve!
Fruit pizza is typically made with a cream cheese frosting spread over top of the giant cookie base. Combine 8 oz cream cheese, 5 tbsp butter softened, 2 cups powdered sugar, 1 tsp vanilla extract and 1 tbsp milk. Mix until creamy!
Fruit pizza will not get soggy if serving immediately after is has been assembled. In order to prep ahead while avoiding a soggy pizza, make the cookie, frosting and glaze separately and cut the fruit. Assemble just before serving.
