    This salad will blow your socks off! Steak combined with quinoa, strawberries and ginger sauce is like heaven in your delicious little salad bowl.

    I have always been a lover of lunch fare. I suppose you could call me the lunch lady, but I don’t wear a hair net. Lunch is my favorite meal of the day, hands down. Salads and sandwiches lend for so much creativity! Fruits, vegetables, meat and sauces of many kinds. This week I have taken my lunch-loving to a new level. I’m creating a NEW salad or sandwich each day of the week and because I’m in a chipper mood (or something), I’m giving away $$ to a few people who comment on my Facebook lunch posts!

    So here we go. My first new and delicious lunch of the week! Steak Salad with Quinoa and Strawberries! It was a home run. I didn’t want to drizzle just any dressing over it, so I thought hard about what would fit perfectly with all of these flavors and textures. I remembered how much I love dipping steak into that delicious Ginger Sauce at Benihana and knew it had to be paired with this salad.

    The flavors in this salad were meant to be together. If I weren’t such a lunch fanatic, I might just eat this every day.

    Steak Salad with Quinoa, Strawberries and Ginger Sauce

    This salad is DELICIOUS! The flavor is unbelievable and it is super healthy.

    Ingredients

    • 4 cups mixed greens
    • 8 large strawberries hulled and chopped
    • 1/2 of a red onion finely chopped
    • 1 cup cooked quinoa
    • 1/2 cup ginger sauce
    • 8 oz. steak cooked and cut into strips

    Instructions

    • Divide the greens in two separate bowls. Top each with half the strawberries, half the red onion, half the quinoa, half the ginger sauce and half the steak.
    • Serve immediately. Store leftovers in an airtight container.
