    Avocado and Onion Salad Recipe

    Combining creamy avocado and red onions in this simple recipe creates a light and delicious summer salad. Lots of flavor makes this colorful salad an easy choice for a light lunch, healthy snack or just a great side dish!

    Summer is coming, fresh fruits and vegetables are growing and will soon be available at the farmers markets and growing in our gardens. I’m excited for this time of year! I love avocados and they pair so well with the sweet and mild red onion.

    MAKE YOURSELF AN AVOCADO AND ONION SALAD

    Arrange the following on a serving platter:

    3 Hass avocados, thinly sliced

    1/4 small red onion, very thinly sliced

    instacart

    In a small bowl, combine:

    1 tablespoon extra-virgin olive oil

    1 tablespoon red wine vinegar

    Salt and freshly ground pepper

    Final Step

    Drizzle the dressing over the avocados and onions. Serve immediately to enjoy!

    RECIPE NOTES

    • Red Onions have purplish-red skin with white flesh tinged with red. They have a mild to sweet flavor compared the white onion. They are delicious both raw and cooked.

    • This recipe is best served immediately. But if you need to prep it in advance, I would recommend preparing it no more than 2 hours in advance and placing it in the fridge covered.

    My husband and I sat in front of the tv and ate this entire plate like it was a bowl of popcorn. Except we used forks. And we had really bad breath afterward. 🙂

    SELECTING A RIPE AVOCADO

    If avocados go on sale, it’s great to pick up a handful and let them ripen at home. There are so many ways to enjoy them that they’ll never go to waste. Selecting an avocado that is ready to enjoy takes a little more knowledge, however. Try these simple tests to select your next avocado batch:

    • TEST 1 – A good test to check ripeness is to use your fingers and push gently into the avocado to see if it yields to pressure near the top where it was connected to the tree. If it gives freely and feels mushy, the avocado is past its prime. If the avocado is rock-solid and there is no give to touch, the avocado needs a few more days to ripen.

    • TEST 2 – Pop off the stem of the avocado where the avocado separated from the tree (see step 1 below for a visual). If a dark brown color is revealed, the avocado is past its prime. If it’s impossible to remove the stem nub, the avocado is not ripe enough to eat. If a green color is revealed, perfectly delicious avocado flesh is ready to be enjoyed!

    AVOCADO RECIPES AND IDEAS

    Avocados are one of my favorite versatile foods because they taste amazing in so many different recipes! Here are just a few of my favorite ways to enjoy avocados!

    • SOLO! I love slicing an avocado in half, sprinkling sea salt into the flesh and spooning out bites for an easy, healthy snack.

    • Scrambled or fried eggs that are topped with avocado slices are an easy and yummy breakfast option!

    • Philadelphia Sushi Roll Bowls are one of my new favorite lunches.

    • Guacamole is one of the most well-known uses for avocados. Try my classic guac recipe or get crazy and try this yummy Mango Crab Guacamole!

    • Throw them on top of your next burger or turn a BLT into a BLEAT.

    • Spoon mashed avocado over a piece of toast and sprinkle with Everything But The Bagel Seasoning.

    • Throw chopped avocados into your favorite chopped salad!

    • Stuff them with other ingredients, such as corn, feta cheese and tomatoes.

    Ingredients

    • 3 avocados peeled, pitted and sliced
    • 1/4 small red onion thinly sliced
    • 1 tbsp. olive oil
    • 1 tbsp. red wine vinegar

      It seems like you certainly have a lot going on right now, so thank you for still posting!! That goodie basket looks fantastic, along with your avocado and red onion! I just made a raspberry, mango, and avocado salad last night that had red onions in it. When my mom and I are the only ones home, I can get really creative with dinner 🙂 But good luck on your upcoming week, and I'll keep your son in my thoughts. Surgery is never fun.
