Once summer arrives, you will have that oh-so-yummy problem of having too many berries on your hands. This is actually never a “problem” for us because we are a berry-loving family. Bookmark this recipe for those overflowing berry times!

The shortbread crust in this recipe is tried and test, super delicious and never fails. The chocolate and berry mixture on top is so ridiculously delicious you’ll want to eat the entire pan!

HOW TO MAKE CRUMBLE BARS WITH BERRIES

Preheat oven to 350 degrees F. Line a 9×13 pan with parchment and set aside.

    PREPARE THE CRUST

In a large bowl, combine the egg, butter and sugar. Mix until creamy. Add flour and salt and stir until combined. Using your fingers (flour them, if needed), press the dough evenly into the bottom of the prepared pan. Bake in the preheated oven for 15 minutes.

    PREPARE THE FILLING

Spread chocolate chips evenly over crust (if using).

    WHICH DESSERTS TO MAKE NEXT

    • Peanut Butter Blondies are unthinkably delicious, super easy to make and they are the perfect excuse to bake when you have extra candy on your hands. This is the perfect easy dessert to bring to any gathering!
    • Reese’s Cheesecake Brownies are the best of all dessert worlds! Cheesecake, brownies, chocolate and peanut butter all in a single bite! This is the BEST kind of party food. It’s the first thing to get devoured every single time!
    • Meet Chocolate Caramel Brownies, my favorite brownie recipe of all time. These are the BEST brownies you will ever eat! Hide the caramel in the middle for a delicious surprise. Bring these to parties and people will love you.
    • Make homemade butterfinger bites in your own kitchen! And using only 3 ingredients! These are great for parties of any kind.
    • Monster Cookies are not just massive. They are packed with delicious ingredients and texture and color and alllll the good stuff!

    CAN YOU FREEZE CRUMBLE BARS

Yes! Wrap tightly in foil and/or place in a plastic freezer bag. Seal tightly and freeze. Use within 3 months for best results. When you are ready to enjoy, allow them to thaw completely in the fridge or at room temperature.

    RECIPE NOTES

    • Chocolate chips can be omitted completely for a berry-focused dessert.
    • Any combination of raspberries, blackberries, blueberries or chopped strawberries can be used.
    • Let both butter and egg sit at room temperature for 30 minutes if at all possible.

Great question! Thank you for asking! You certainly can. I would recommend drying the fruit with some paper towels so they don’t get everything soggy.

These bars look absolutely perfect! Berries AND chocolate- sold! 🙂 Sweet story too. I cherish the days at home with my little ones before they're school age. Time goes too fast!
