Mixed Berry Crumble Bars Recipe

One of my favorite ways to use up berries. These crumble bars are DELICIOUS! Bring them to any gathering and be the star of the show!

Once summer arrives, you will have that oh-so-yummy problem of having too many berries on your hands. This is actually never a “problem” for us because we are a berry-loving family. Bookmark this recipe for those overflowing berry times!

The shortbread crust in this recipe is tried and test, super delicious and never fails. The chocolate and berry mixture on top is so ridiculously delicious you’ll want to eat the entire pan!

HOW TO MAKE CRUMBLE BARS WITH BERRIES

Preheat oven to 350 degrees F. Line a 9×13 pan with parchment and set aside.

PREPARE THE CRUST

In a large bowl, combine the egg, butter and sugar. Mix until creamy. Add flour and salt and stir until combined. Using your fingers (flour them, if needed), press the dough evenly into the bottom of the prepared pan. Bake in the preheated oven for 15 minutes.

PREPARE THE FILLING

Spread chocolate chips evenly over crust (if using).

In a medium bowl, combine berries, sugar and lemon juice. Stir until combined. Pour evenly over crust/chocolate chips.

PREPARE THE TOPPING

In a small bowl, combine the brown sugar, flour and butter. Stir until mixture is crumbly. Spread evenly over filling layer.

Bake for an additional 35-45 minutes. Let cool and cut into squares.

CAN YOU FREEZE CRUMBLE BARS

Yes! Wrap tightly in foil and/or place in a plastic freezer bag. Seal tightly and freeze. Use within 3 months for best results. When you are ready to enjoy, allow them to thaw completely in the fridge or at room temperature.

RECIPE NOTES

  • Chocolate chips can be omitted completely for a berry-focused dessert.
  • Any combination of raspberries, blackberries, blueberries or chopped strawberries can be used.
  • Let both butter and egg sit at room temperature for 30 minutes if at all possible.

      Great question! Thank you for asking! You certainly can. I would recommend drying the fruit with some paper towels so they don’t get everything soggy.
