I have been making this fun pancake recipe for my boys since they were teeny tiny. We have always called them strawbluenkleberry pancakes for fun because strawberries, blueberries and sprinkles are staples in our ‘cakes.
I have fond memories of my boys trying to piece that word together. This is my go-to recipe for a lazy Saturday morning. Now at ages 10 and 14 I still get requests for these sprinkle-laden, perfect pancakes.
If you are hoping to change things up, consider serving your family a colorful, tasty treat to start the day! This is the best pancake recipe, it is made using super simple ingredients and it turns out perfectly every single time. Better than using a box mix, but not requiring much more effort!
HOW TO MAKE THIS PANCAKE RECIPE WITHOUT BUTTERMILK
STEP 1
In a large mixing bowl, combine the dry ingredients: all purpose flour, sugar, baking powder and salt. Mix well.
In a separate bowl, combine the wet ingredients: milk, egg, melted butter and vanilla extract. Using a mixer or spoon, mix until smooth.
Gradually add the flour mixture, stirring until batter is free of lumps.
STEP 2
Place a non stick skillet over medium heat and spray generously with cooking spray.
Add the pancake batter to the hot skillet (1/4 cup of batter at a time).
Optional: Add a few blueberries and sprinkles to each pancake before flipping (other berries, too, if using!).
Each cake takes about 3 minutes to cook per side or until pancakes rise and become golden brown.
Repeat until the batter is gone, spraying the skillet with cooking spray before each new batch.
Spread butter over warm pancakes and pour maple syrup and extra berries over the tops.
Recipe Notes
- Use any combination of berries to put in these pancakes, but put only a small handful in each pancake.
- Frozen blueberries can be used instead of fresh blueberries.
- When serving these all at once, keep them on a plate and cover with foil or a few paper towels to keep them warm.
- Types of milk to use in this recipe: coconut milk, almond milk, skim, 1%, 2% or whole milk.
- To increase the fluffiness, consider separating the egg yolk from the egg white. Whipping egg whites before adding them to the remaining wet ingredients will result in an extra fluffy pancake.
- Use a large skillet or an electric griddle for this recipe.
- The vanilla extract does a great job of adding flavor, but try adding a tablespoon of fresh lemon juice for an added burst!

What To Do With Leftover Pancakes
Reheat leftovers the next day in the microwave for 30 seconds! You could also use the cakes as “bread” for a breakfast sandwich. Fill it with sausage, bacon, eggs and/or cheese! Another option is enjoying leftovers as a snack, spread with peanut butter or honey.
