I have felt mildly to moderately insane over the past few days. Dan has been immersed in a skydiving course, so the little boys and I have been flying solo. I try not to speak of bodily fluids too much on my food blog, but I will just say we have had our share of bodily-fluid-related incidents, as well as our share of meltdowns, tantrums and outbursts. Weee! Fun times! People keep telling me that one day I will miss this crazy time in our lives, so I do my best to absorb every bit of it.
One of the things that always keeps me feeling sane is cooking and baking! I was happy when a friend asked if I had any stuffed chicken breast recipes on my blog because I did not. I was more than happy to come up with a few options for her. Here is my first attempt. Enjoy this one! I will definitely make it again.
HOW TO MAKE STUFFED CHICKEN BREASTS WITH ARTICHOKES
Easy to prepare, this cheese stuffed chicken recipe is a memorable meal!
STEP 1
Preheat your oven to 350 degrees F. Coat two 9×13-inch oven safe baking dishes with cooking spray or a light mist of olive oil, then set aside.
In each of 10 defrosted chicken breast halves (I made a huge batch, so cut back, as needed), cut a slit horizontally into the breast without going all the way through to the other side. Salt and pepper the outside of each chicken piece.
STEP 2

Chop the julienne sun-dried tomatoes.

Drain and chop artichoke hearts.

Chop fresh basil to equal a 1/2 cup.
STEP 3
In a medium bowl, combine: sundried tomatoes, artichoke hearts, chopped basil, crumbled feta cheese and cheddar cheese. Mix well.
STEP 4

Divide the mixture between the chicken breast halves and spoon into the openings.

Seal the ends as best as possible and secure the side of the chicken with 2 toothpicks each. Divide the chicken between the 2 prepared baking dishes.

Bake in the oven for 30-35 minutes, or until the chicken is cooked through.

Remove the toothpicks and serve warm.
RECIPE TIPS

Fresh basil or fresh spinach leaves chopped and added to the filling are excellent options – try them both. The tomatoes and spinach make a delicious combo!

For a little spice, add a 1/2 tsp of red pepper flakes into your creamy mixture.

I love garlic in everything – add 1 teaspoon of garlic powder to your mixture for a bump of flavor!

This dish can be prepared in a cast-iron skillet – it will brown the chicken nicely and cook evenly. Once you add the chicken, cook it 5-7 minutes (over medium high heat) on each side and then place a cover over the skillet to help the chicken finish cooking and the cheese melt for an additional 2-3 minutes.

If you don’t love feta, use fresh mozzarella cheese instead.
HOW TO SERVE STUFFED CHICKEN

Mashed potatoes are an easy and common choice. They are really easy to make a batch in the Instant Pot.

Continuing with a healthy dinner theme, two of my favorite sides dishes are a sauteed asparagus dish or zucchini noodles (zoodles!) and mushrooms.

Got leftovers? Add them into an airtight container and store them in the fridge for 3 to 4 days.
HOW TO REHEAT STUFFED CHICKEN BREASTS
To reheat, I advise doing so in the oven vs the microwave. Place the stuffed breasts into a baking dish and place into a 350 degree F oven for 20 minutes, or until heated through.

- 6 chicken breasts fat trimmed
- 8 oz. jar julienne sun-dried tomatoes chopped
