    Oatmeal Spice Cake

    A full, moist, scrumptious cake that will test your will power and excite your taste buds!

     

    I continue to learn new things about my husband all the time. I recently discovered that this is one of his favorite cakes that his mom makes. I had no idea! I decided to try making it myself and it is most definitely a full, moist, scrumptious cake. Of course, I am a lover of all things sweet and cake is one of my hugest weaknesses. Thank goodness I was blessed with strong willpower because I would be eating things like cake and cookies and ice cream and candy during the majority of my waking hours.

    Did you know that oatmeal is a staple in several delicious recipes, not just this cake? I have found myself loving to work with oatmeal, a recent favorite is my Salted Caramel Oatmeal Bars, put these on your list of oatmeal inspired recipes. Now back to the cake!

    Preheat oven to 350 degrees F. Mix together in a medium bowl:

    2 1/4 cups boiling water

    1 1/2 cups oatmeal

    3/4 cup butter, softened

     

     

    Cover bowl with a towel and set aside.

    In a separate medium bowl, beat together:

    3 eggs

    1 1/2 cups white sugar

    1 1/2 cups brown sugar

    1 1/2 teaspoons vanilla

     

     

    In a large bowl, combine:

    2 1/4 cups flour

    1 teaspoon salt

    1 1/2 teaspoons cinnamon

    1 teaspoon nutmeg

    1 1/2 teaspoons baking powder

    1 1/2 teaspoons baking soda

     

     

    Add the egg-sugar mixture to the flour mixture and then add the oatmeal-water-butter mixture and stir everything together.

     

     

    Pour cake mixture into a lightly greased 9×13 baking dish.

     

     

    Bake in preheated doven for 40 minutes, or until a toothpick inserted in the center comes out clean. Let cake cool.

     

     

    To make the topping, add the following to a medium saucepan:

    1 1/2 cups coconut flakes

    1 teaspoon vanilla

    1/2 cup heavy whipping cream

    1/2 cup butter

    3/4 cup brown sugar

     

     

    Cook over medium heat, stirring constantly. Bring to a boil and let boil for one minute.

     

     

    Let cool and spread onto cooled cake. I wish I had a photo of the entire cake with the topping. I was a bit too eager to dig in! So much for willpower, huh?

    Ingredients

    CAKE

    • 2 1/4 cups boiling water
    • 1 1/2 cups oatmeal
    • 3/4 cup butter
    • 3 eggs
    • 1 1/2 cups white sugar
    • 1 1/2 cups brown sugar
    • 1 1/2 tsp. vanilla
    • 2 1/4 cups flour
    • 1 tsp. salt
    • 1 1/2 tsp. cinnamon
    • 1 tsp. nutmeg
    • 1 1/2 tsp. baking powder
    • 1 1/2 tsp. baking soda

    TOPPING

    • 1 1/2 cups coconut flakes
    • 1 tsp. vanilla
    • 1/2 cup cream
    • 1/2 cup butter
    • 3/4 cup brown sugar

    Instructions

    • Preheat oven to 350 degrees F. Mix together water, oatmeal and ¾ cup butter. Cover with towel and let stand for 20 minutes.
    • Beat together the eggs, white sugar and 1 ½ cups brown sugar and 1 ½ teaspoons vanilla in a large bowl. In a medium bowl, combine flour, salt, cinnamon, nutmeg, baking powder and baking soda. Add to egg-sugar mixture. Now add water-oatmeal-butter mixture to it.
    • Pour cake mixture into lightly greased 9×13 baking dish and bake in preheated oven for 35-40 minutes, or until a toothpick inserted into the center of it comes out clean. Let cake cool.
    • For the topping, add coconut flakes, 1 teaspoon vanilla, cream, ½ cup butter and ¾ cup brown sugar to a medium saucepan. Stir and bring to a boil. Let boil for one minute. Let cool and spread onto cooled cake.

      i love oatmeal i'd like to make this! but i don't like coconut, what should i do about the topping then?

        I make an almost identical cake but I use walnuts or pecan instead of coconut in topping as my family doesn’t care for it. It’s one of the boys favorite cakes!
