    Easy Strawberry Brownies (made with a cake mix!)

    Strawberry Brownies (aka Strawberry Bars) are super easy to make. Only a few ingredients are needed, including a box of cake mix! The touch of strawberry jam and white chocolate send them into another world of delicious.

    Strawberries and brownies are two words that you don’t typically hear used in the same sentence. If you love them separately (and who doesn’t?!) then you are going to LOVE them together. This is one of those super easy dessert recipes that you’ll add to your rotation and make for parties and holidays.

    I first made these beauties a few years ago, back when my boys were both little-little (sniff). I vividly remember them tasting them for the first time. The ooo-ing and ahh-ing was off the charts. This is such a great quick and easy dessert recipe to have in your back pocket for those times when you have to make a sweet dessert quickly!


    HOW TO MAKE STRAWBERRY BROWNIES RECIPE

    STEP 1

    Preheat oven to 350 degrees F. Lightly coat a 9×13 baking dish with cooking spray and set aside. Alternatively, line the pan with parchment and spray lightly. In a large bowl, combine:

    • 15.25-oz. package strawberry cake mix

    • 3/4 cup butter, melted

    • 1/3 cup evaporated milk

    • 1 teaspoon vanilla extract

    Mix well with a spoon or hand mixer and spread batter evenly into pan (only 2/3!), pressing with fingertips. Bake in the preheated oven for 8 minutes.

    STEP 2

    Sprinkle white chocolate chips evenly over the partially cooked brownies. Drop strawberry jam in dollops over the top. Drop the remaining batter over the top in clumps (it will not be completely covered). Bake for an additional 20 minutes. Let cool before cutting into squares.

    RECIPE TIPS

    • Change up the flavors of these brownies by using different varieties of cake mix. Chocolate, white, yellow, lemon or funfetti would all be delicious!

    • Be careful not to overcook these! They should be soft in the center, but should jiggle uniformly when you lightly shake the pan.

    • For an extra fresh pan of bars, add 1 cup of fresh strawberries that have been hulled and chopped to the batter.

    • A simple icing would taste amazing drizzled over the tops! Mix powdered sugar with a few tablespoons of milk!

    • White chocolate chips can be replaced with any other variety of chocolate.

      Love the recipe only, just was unsure on baking time if i omitted the jam & chips and just did a light glaze after finish baking. the house smells amazing!!!

      I just made this recipe & it was awesome!!!! Works with any flavor cake mix and jam combination…you can get creative with this one for sure 😉
      I did… Party rainbow chip cake mix, raspberry jam & M&Ms….Maily because I was improvising with what I had in the pantry, but regardless, a WONDERFUL dessert!!
