    Creamy Vegetable Dip Recipe

    This Creamy Vegetable Dip is a great appetizer to share at any gathering, big or small. Pack as many veggies as you can inside and serve with crackers or more vegetables!

    Why This Recipe Works

    It’s that time of year! Diving into dreamy appetizers and treats of all varieties is totally acceptable. There are so many dang types of food that I enjoy eating this month, which is why January typically involves a lot of working out and smoothies. This yummy and creamy vegetable dip is in my fridge now and I can’t stop eating it. Send help!

    I have been making this dip for years and I love all of the delicious bits of veggies that are hiding inside. Healthy deliciousness hides inside of the creaminess. And there are ways to make the dip healthier, so keeping reading for suggestions.

    How To Make Creamy Vegetable Dip

    STEP 1

    In the bowl of a food processor, combine:

    • Carrots
    • Bell pepper
    • Cucumber
    • Celery
    • Broccoli
    • Jalapeno peppers (optional)

    STEP 2

    Pulse until the vegetables are finely chopped.

    STEP 3

    In a large mixing bowl, combine:

    • Sour cream
    • Cream cheese
    • Mayo
    • Lemon juice
    • Salt

    Stir until creamy. Add the vegetables to the sour cream mixture and stir until combined.

    Refrigerate until ready to serve. Serve with fresh vegetables or crackers.

    Recipe Notes

    • Make this dip healthier by cutting the amounts of all creamy ingredients in half. Or substitute sour cream with a light variety, or omit mayo entirely.
    • Add 1/2 teaspoon cayenne pepper for an added kick!
    • If you don’t have the exact fresh vegetables on hand, feel free to replace with others such as cauliflower, green beans or zucchini.
    • Use leftovers as a dressing on your next salad!
    • Paprika and/or garlic salt would be tasty additions to this dip.

    Ingredients

    • 2 carrots cut into chunks
    • 1/2 bell pepper seeded, stems removed and cut into chunks
    • 1/2 cucumber peeled and cut into chunks
    • 3 stalks celery cut into chunks
    • 1 cup broccoli florets
    • 1 jalapeno pepper stems removed and cut in half (optional)
    • 1 cup sour cream
    • 8 oz cream cheese softened
    • 1/2 cup mayonnaise
    • 2 tbsp lemon juice
    • 1/2 tsp salt

    Instructions

    • In the bowl of a food processor, combine the carrots, bell pepper, cucumber, celery, broccoli and pepper (if using). Pulse until veggies are finely chopped.
    • In a large mixing bowl, combine the sour cream, cream cheese, mayo, lemon juice and salt. Stir until creamy. Add the veggies and stir until combined. Refrigerate until ready to serve. Serve with fresh vegetables or crackers.

      I made this today and it turned out super runny. 🙁 I think I am going to try to add more veggies and maybe more sour cream?

      I made this for a party this weekend and it was a hit. I did omit the lemon and I used paper towels to absorb extra liquid from the vegetables before mixing it with the creamy base. I also added half a teaspoon Hidden Valley green onion dressing mix for extra flavor. I was asked for the recipe, will make this again for the next party.

      This was SUCH a big hit at a party! I will be remaking this for years to come. I will definitely squeeze off some liquid from the pulverized veggies (especially the cucumber), and I did use a bit less lemon juice. The dip settled and became a little watery (to be expected), so I stirred it back up frequently. I served it with other veggies and small dipping pretzel rods. You could serve just about anything to dip in this! Flavors are incredible, base is surprisingly not super heavy, and the colors are beautiful!
