Make that irresistible sauce you find at taco trucks in your own kitchen! Don’t limit taco truck green sauce to just tacos. It goes perfectly with so many different foods.

    Why This Recipe Works

Raise your hand if you’re obsessed with taco trucks like I am! I literally can’t see one and not stop to order something. It has a magnetic pull that I can’t seem to resist. And of course, the famous taco truck green sauce has to accompany everything I order! It doesn’t hold a candle to the traditional red sauce.

There is something so delicious and magical about this green sauce. How is it made? Is there a secret ingredient hiding inside? Could I make this myself?

Given that I’m a bit of a homemade sauce fanatic, I had to take myself up on the challenge and give it a whirl. This version is so perfectly similar to what you’ll find at your favorite taco trucks.

Mexican taco green sauce requires only a few simple ingredients and less than 30 minutes of your time, making it a very easy recipe. Get ready to drizzle this creamy green sauce over everything you see!

    Recipe Ingredients

Bowls lined up on a counter with ingredients inside, such as chopped jalapenos and onions.

Jalapeño peppers – Remove stems for jalapeno peppers and slice into small chunks. For a less spicy salsa, remove the seeds. For a more spicy green sauce, add a few serrano peppers to the mix.

Yellow onion – Any variety of onion can be used, such as white onion, green onions or red onions.

Garlic – In place of minced garlic cloves, you may add 1 teaspoon garlic powder to the green taco sauce.

Olive oil – Add extra oil after baking for a thinner sauce. Olive oil can be swapped out for avocado oil, grapeseed oil or vegetable oil, depending on what you have on hand.

Lime juice – Reserve lime wedges to place next to serving dish. A squirt of freshly squeezed lime juice tastes amazing with this sauce.

Salt – Any variety of salt works great, such as kosher salt, sea salt or table salt.

How to Make Taco Truck Green Sauce

    Step 1

Preheat oven to 425 degrees F. In a medium bowl, toss the jalapenos with garlic, onion, garlic, olive oil, lime juice and salt. Mix well. Transfer to a baking sheet lined with parchment paper.

    Step 2

Bake in the preheated oven for 20 minutes. Remove from oven and allow the roasted jalapenos to cool.

    Step 3

Transfer to a medium bowl and use an immersion blender to create a smooth mixture. Cover green taco truck sauce and refrigerate until ready to serve.

    Recipe Notes

    • Add fresh flavor to this creamy jalapeno sauce by adding fresh cilantro.
    • If you don’t own an immersion blender, a regular blender or food processor will work.
    • For an extra creamy texture, add a little sour cream before blending.
    • Looking to kick up the heat even more? Add black pepper, cayenne pepper, red pepper flakes, hot sauce, extra fresh jalapenos or a little bit of chili powder.
