Feta Dip only takes TEN minutes to make and is ridiculously delicious. I’d tell you it’s a great party food, but it never makes it to the party for us (don’t judge).
My little boys and I are in the middle of a very fun and long adventure that began nearly a week ago. Since last Tuesday, we have visited six states, we’ve driven 1,396 miles in our old, trusty little car and we have met/reunited with 24 people. We are not even halfway done! We have so many adventures yet to experience before we head back to Minnesota. If you are curious about the meaning of the trip, feel free to click over to our family blog to read more. Today we are in Louisville, Kentucky, and we plan to have lunch with our kind hosts on the river and then head down toward Nashville for a few nights. We love adventure!
As you might be able to guess, I am not cooking and photographing food while on the road. I made this dip a few weeks ago (gasp…doing work in advance!), and oh goodness, friends, it was a good one. It’s super quick and fresh and tasty. It’s a great summer starter or snack, just like this Zingy Black Bean Dip and my favorite Hummus Recipe!
In a medium bowl, combine:
1 1/2 cups feta cheese crumbles
1 1/2 cups sour cream
3 green onions, sliced then chopped
2 cloves garlic, minced
1/4 cup flat-leaf parsley, chopped
1 tablespoon fresh oregano, chopped
Juice from 1/2 a lemon
Salt and pepper, to taste
Mix well. Cover and chill until ready to serve. Serve with chips, crackers or veggies!
Enjoy! Gotta go get my little Sammy out of bed and start packing up our things! Thanks for reading.
